2:00 - 3:00 pm Cultivation and Terroir of Honey-Carla Marina Marchese, founder of The American Honey Tasting Society (AHTS) and the revolutionary collection of artisanal honeys under the Red Bee Brand, will discuss the philosophy of terroir and the diverse flavor profiles of honey determined by the type of nectar gathered by the honeybees.

3:15 - 4:00 pm Honey Sensory Presentation - Carla Marina Marchese will provide a guided sensory presentation and tasting of seven varietal honeys.

4:00 - 4:45 pm William Jaggard Scholarship – Recipient Samantha McKenna from the University of Illinois at Urbana-Champagne will present her research on "Identification and characterization of mint lactones: trace level odor important compounds in peppermint oil"

4:45 - 5:15 pm SFC Business Meeting
