Shafer Wine Dinner

Wine making at Shafer started in the late 1970’s; they were completely absorbed in learning how to grow great fruit and grew to focus on soil and climate. Also in an effort to making the best tasting wine that their vineyards could deliver. Concurrently they have turned to sustainable agriculture practices. Believing that earth-friendly farming methods not only create healthier vineyards, but also lead to more enjoyable wines.

Doug Shafer who is a friend of Café Maxx, along with their wine maker Elias Fernandez has been making world class wines since 1978.

For our wine dinner we will pour five wines

  1. Red Shoulder Ranch Chardonnay (one of my favorite Chardonnays)- 1994 vintage of Red Shoulder Ranch Chardonnay is named one of the “Top Ten Wines of The Year” by Wine Spectator Magazine.
  1. Their new wine TD-9- a Proprietary Red Blend of Merlot, Cabernet Sauvignon and Malbec.
  1. One Point Five- Stags Leap District Cabernet Sauvignon which shows the pedigree of the Shafer tradition
  1. Relentless Napa Valley Syrah/Petite Sirah- the soul of this wine comes from Shafer’s long time wine maker Elias Fernandez. Its purple-midnight color and solid black fruit bring a touch of elegance to this otherwise bold, flamboyant wine.
  1. Hillside Select- Shafer’s signature wine! These struggling vines produce less than half the fruit tonnage per acre as a typical Napa Valley Vineyard. The clusters are small, made up of blueberry-sized grapes that when crushed offer rich flavor, soft texture and smooth, elegant tannins. Shafer releases Hillside Select four years after its vintage date. We typically find that in the first two or three years after it’s released the wine is aromatically vibrant and offers juicy, mouth-filling flavors of cassis, black cherry, blackberry, dark spice. This can be followed by a “quiet phase” of a year or two in which aromas and flavors seem more restrained. By year ten we see a wine that still retains some fruit of youth, while taking on delicate layered nuances of age, “One of The World’s Greatest Wineries” by Robert M. Parker Jr.

Join us for this elaborate affair you will not soon forget. This starts with wine pass- arounds at the bar with The Red Shoulder Ranch Chardonnay followed with the First Course meal paired with the Shafer wines. Each course will be paired by Chef Oliver Saucy and his staff as they pulls out all of the stops to prepare this epicurean Five Course Dinner.
