Coconut Delight Cake

1 ½ C. all-purpose flour½ tsp. salt8 eggs, separated
1 ½ C. plus 4 Tbl. Sugar-dividedCoconut Caramel FillingMeringue
1 ½ C. water¼ C. dry white wine¼ C. flaked coconut
Line a 10-inch round cake pan with wax paper. Preheat oven to 350 degrees.
Mix flour and salt; sift. Whip yolks until creamy. In a clean bowl with clean beaters, whip egg whites, adding 1 ½ cups sugar slowly until thick; mixture should not be grainy. Slowly stir beaten yolks into whites. Mix in flour mixture a little at a time, folding clockwise. Pour cake into prepared pan and bake 30 minutes. Remove from oven, turn over and remove from pan to a flat surface or cooling rack. Let cool. While cake is cooling, make Coconut Caramel Filing and Meringue. Slice cool cake horizontally into 3 layers. In a saucepan, add 4 tablespoons sugar to water. Heat until sugar is dissolved and mixture syrupy. Add wine; stir. Brush syrup on each cake layer. Spread Filling on top of bottom layer and over remaining 2 layers as stacked.
Spread Meringue completely on cake; sprinkle coconut over top. Store covered in refrigerator.

New Site Launches as the Countdown to September Continues
(RICHARDSON, Texas) August 20, 2004 - Youth Soccer Month, has launched a new website with additional resources and content to further the national celebration of Youth Soccer Month - Celebrating Soccer in America this September.
The new site features a fresh look and additional navigational elements. The inaugural Youth Soccer Month website launched August of 2003 and has remained online throughout the year as a resource to those planning Youth Soccer Month activities this year. The site has seen significant increases in traffic and should exceed last year's traffic by mid-September.
Youth Soccer Month was created last year as a platform for soccer enthusiasts to unite in celebration of the game. The Youth Soccer Month web site is the online destination for all that is Youth Soccer Month - Celebrating Soccer in September.
