THE PENINSULA SHANGHAI INTRODUCES “FROM THE LAKE TO THE TABLE,” A SELECTION OF GOURMET CAVIAR EXPERIENCES IN PARTNERSHIP

WITH CHINA’S KALUGA QUEEN CAVIAR

The Peninsula Shanghai and Kaluga Queen Caviar are partnering to offer guests and visitors an exclusive menu of gourmet caviar experiences, including the prestigious first serving of Beluga Caviar produced ever in China.

Located on the shores of the picturesque Thousand Island Lake in Hangzhou, the 200,000-sqm Kaluga Queen farm is the only internationally certified caviar farm in China, and the first sustainable sturgeon aquaculture farm in Asia.Known as “the most beautiful lake under heaven,” Thousand Island Lake provides the perfect aquatic environment for cultivating Siberian, Russian, Kaluga and Amur sturgeon.

Often called “black gold,” caviar has been a coveted delicacy for more than 2,000 years, since being discovered by the ancient Persians. Today, chefs and gourmands cherish the delicious salt-cured sturgeon eggs, which garnish the world’s finest dishes. The Kaluga Queen farm aims to produce 35 tonnes of caviar per year, and 2014 is the first time that Beluga Caviar, the most cherished type of caviar, is being harvested as it takes 10 years to fully nurture the sturgeons.

Exclusive treats to delight gourmands include a Caviar Afternoon Tea, which will be served at The Lobby from December 2014. Guests can choose from Ocietra, Shrencki and Beluga Caviar pearls served with Blinis, Crème Fraiche and traditional garnishes. An optional Champagne pairing service is also provided. The large Beluga Caviar eggs are light to dark grey in colour and boast a complex yet light and delicate flavour that are appreciated by true connoisseurs. Ocietra Caviar is dark to light brown with a smooth, velvety texture and rich, nutty flavour, and Schrencki Caviar is dark drown and has a clean, buttery taste.

The talented chefs at Yi Long Court and Sir Elly’s will also prepare exquisite dishes featuring Caviar as a signature ingredient. This season’s selections at Yi Long Court include premium dim sum treats such as Steamed Premium Prickly Sea Cucumber Dumpling with Minced Shrimp and Caviar, while Sir Elly’s will serve Ocietra King Crab with Abalone, Egg, Cress and Cucumber; and Hand-selected Beluga Baked Cod with Celeriac, Articoke, Borage and Sea Urchin.

Caviar connoisseurs can also purchase Peninsula-branded caviar to enjoy with family and friends at home, or to give as a luxurious holiday gift. From December, The Peninsula Boutique will stock the premium caviar in both 30ml and 100ml servings.
