STICKY CARROT AND ORANGE MUFFINS
Ingredients
Muffins
175g sunflower oil
175g light brown sugar
3 large eggs
140g carrots, peeled and grated
100g raisins
1 large orange –the zest
200g self raising flour
5ml bicarbonate of soda
5ml ground cinnamon
5ml mixed spice
Sticky Topping
30g light brown sugar
The juice from the orange
Time Plan
Check your oven is preheated to 180C/Gas Mark 4.
- Top, tail, peel and then grate the carrot
- Weigh out 30 g of brown sugar into a smaller bowl and save for the topping
- In a mixing bowl and using a wooden spoon, lightly blend together the sugar, oil and eggs.
- Using the fine grater zest the orange, NOT taking any of the pith
- Stir in the grated carrots, raisins and orange zest to the liquid mixture
- In another bowl mix together the flour, cinnamon, mixed spice and bicarbonate of soda that have been put together for you
- Now carefully add the moist mixture to the floury mixture, lightly mix together. The mixture will be fairly soft.
- Using two table spoons spoon, carefully divide the mixture equally between all the muffin cases
- Using oven glove put the muffin tray the oven to bake, (about 20 minutes)
- While the muffins are in the oven wash up and tidy up, then make the glaze – by juicing the orange and adding the liquid to the remaining brown sugar and stirring
- As soon as the muffins come out of the oven, lift the muffins on to your tin foil sheet. Now carefully spoon the glaze over the muffins. Wrap up the muffins to cool and soak up the sugar mixture and melting it with the residual heat of the muffins making them lovely and sticky, when you open them up at home.
