Spicy Honey Lemon Chicken

  • 2 boneless, skinless chicken breasts (Rosie’s), chopped smaller than ½”
  • lemon juice to marinate
  • honey (to taste)

Add any combination of the following ingredients to taste:

  • minced sweet red or green pepper
  • minced jalapeno pepper
  • finely chopped cilantro
  • grated ginger
  • finely chopped dill, oregano, marjoram, rosemary
  • touch of honey mustard sauce

Garlic Chicken

  • 1-2 lbs chicken
  • 3 cloves minced garlic
  • 2 tbsp coconut cream
  • 1 tbsp honey

Marinate chicken in lemon juice. Mix in other ingredients.

Cream Mint Chicken

  • 2 lbs chicken breasts, cubed
  • 2-4 juiced limes to marinate
  • 3-4 tbsp honey

After a few hours, add:

  • ½ C cream
  • chopped mint

Let stand in refrigerator for 1-7 days.

Lemon Chicken

Chicken marinated in lemon juice. Add honey and mint to taste.

Buffalo

Mix ground buffalo with egg, oregano, and basil to taste.

Buffalo Pate

  • 1 lb fresh buffalo, blended in food processor.

Mix with any combination of the following ingredients:

  • honey
/
  • chili powder

  • butter
/
  • garlic powder

  • salsa
/
  • ¼ - ½ C goat whey

  • basil
/
  • granulated kelp (opt)

  • black pepper (opt)

Mold into half round mound and serve with parsley garnish and avocado slices, or your choice of garnish. Also may be refrigerated in 4-oz glass jars for individual meals.

Fiesta Fish

  • any fish
  • lime juice to marinate
  • 1 minced jalapeno pepper
  • chopped cilantro
  • honey (to taste)

Pesto Shark

  • shark, cubed small

Marinate in:

  • lemon juice

  • honey (to taste)

  • Pesto:

  • finely chopped parsley

  • 1 C olive oil
/
  • 4 cloves garlic

  • honey (to taste)

  • handful pine nuts or walnuts

New Zealand Beef

  • N. Z. beef, cubed small
  • olive oil
  • chopped tomatoes
  • basil,
  • marjoram

Meatballs

2 lbs ground N. Z. or Harris beef

  • 1 egg
  • honey (to taste)

Mix with any combination of the following ingredients:

Form into golf-size balls.

Carpachio

Marinate in covered bowl for 1-3 hours:

  • Harris Ranch beef, sliced into thin strips
  • olive oil
  • Monterey Jack cheese
  • mushrooms, Crimini

Garnish with finely chopped:

  • Parsley
/
  • Onion
/
  • Garlic

Tartare Spread

  • top round or sirloin beef, ground fine

Season with any combination of the following:

  • onion juice or chopped onion
  • green, red, or yellow bell peppers

  • salsa
/
  • pepper

Herbed Sour Cream

Blend sour cream with:

  • garlic or horseradish
/
  • honey

and any of the following herbs:

  • basil
/
  • oregano

  • marjoram
/
  • mint

Mint Lasse Drink

Mix together in jar:

½ part yogurt

  • ½ part Gerolsteiner mineral water
  • juice of 1 lime
  • fresh mint, chopped fine
  • honey (to taste)

Cheesecake

Crust:

  • 1½ C powdered walnuts or pecans
  • 2 tbsp honey to make nuts sticky
  • 2 tbsp melted butter

Mix and press into 9” pie plate. Chill while making filling.

Filling:

  • 1 lb unsalted Cheddar cheese, cut into small chunks and softened at room temperature without heat.
  • ½ C lb butter, melted
  • ½ C cream
  • ¼ C honey (or to taste)
  • 2-3 eggs
  • 2 tsp vanilla

Liquefy in blender or food processor.

Pour into crust. Refrigerate for several hours or freeze for 1 hour.

Sauce Topping:

Mix:

  • 10 – 12 raspberries

  • milk
/
  • honey (to taste)

Alternates:

  • Add lemon juice and grated rind to filling.
  • Add carob powder to filling.
  • Replace butter in filling with peanut oil.
  • Layer berries on crust before adding filling.

Carob Fudge

Mix by hand or in 16-oz blender jar:

  • 1½ C butter, softened
  • ½ C carob powder (to taste)
  • 3 tbsp honey (to taste)
  • 2 fertile eggs

Optional ingredients:

  • ½ C coconut cream
  • bee pollen
  • walnuts or pecans
  • sunflower seeds

Keep refrigerated until serving time.

Chocolate Substitute

Blend:

  • ¼ lb (1 stick) butter
  • 2 tbsp carob powder
  • 2 tbsp honey
  • 1 tsp vanilla (or to taste)

Alternates:

  • Add fresh ground almond butter or chopped pecans.
  • Add grated orange rind.
  • Leave out carob for “white chocolate”.

Reeses

Add peanut oil to basic chocolate substitute recipe.

Creamy Mustard Sauce

  • 5 tbsp yogurt
  • 1 tbsp home-made Mustard:
  • 2½ tbsp apple cider vinegar
  • 2½ tbsp brown mustard seed
  • 2½ tbsp yellow mustard seed
  • 2 tbsp honey (to taste)

Soak mustard seeds in vinegar for 24 hrs. Then blend in honey.

Creamed Salsa

Blend together:

  • tomatoes, chopped
  • onions, chopped
  • cilantro, chopped
  • 3 tbsp yogurt or cream
  • 2 tbsp butter
  • 2 tsp honey (to taste)

Pink Sauce

Blend together:

  • 1 basket cherry tomatoes
  • 1 jalapeno pepper, chopped
  • 4 oz cream
  • 2-3 tbsp honey (to taste)

Curry Sauce

  • ½ C lemon or lime juice
  • ½ C cold-pressed peanut oil
  • 1 green onion, finely chopped
  • 2 tbsp cilantro, finely chopped
  • 1 small clove garlic, finely chopped
  • ¼ tsp red chile, finely chopped
  • ¼ tsp ginger root, finely grated
  • ¼ tsp tumeric root, finely grated
  • 1 heaping tsp cumin
  • 1 heaping tsp brown mustard seed

Grind whole cumin and mustard seed in coffee mill. Blend all ingredients. Use with chicken or fish.

Cucumber Curry Hors D’oeuvres

Mix together:

  • cucumber
/
  • red radish

  • red chile
/
  • cilantro leaf

  • tumeric root
/
  • fennel bulb/leaf

Salsa Swordfish

Marinate swordfish in lemon juice. Top with salsa.

Salsa: tomato, lemon juice, olive oil, cilantro.

Ginger Chicken

Marinate in lemon juice:

1 lb chicken

Drain lemon juice except for 1 tbsp.

Add and mix:

  • ½ C cream
/
  • grated ginger

Fish Tartare Medley

Marinate in lemon juice:

  • salmon
/
  • whitefish

  • tuna
/
  • scallops

Tartar Sauce

Finely chop the following ingredients and add to Aajonus’ Mayonnaise recipe:
