Preliminary Insert Test Procedure

  1. Preparation
  2. Collect materials
  3. Buy unbleached parchment paper
  4. Non Stick
  5. Heat resistant up to 450 °F
  6. Buy Aluminum Foil
  7. Heat Resistant up to 300 °F
  8. Size the inserts
  9. Measure the diameter of the small and large pan
  10. Trace circles of the measured diameter on the parchment paper and aluminum foil
  11. Cut out the circles along the traced lines
  12. Cut additional inserts in case of failures
  13. Place cut outs in test pans prior to the test to ensure correct fit
  14. Implementation
  15. Label the test pans
  16. Place pre cut inserts in test pans after they are greased
  17. Allow a test pan with parchment paper to have the graham cracker crust inserted
  18. Turn the pan upside down
  19. Ensure the graham cracker crust is packed in correctly
  20. Check the insert remains intact and in one piece
  21. Repeat using two large and two small crusts
  22. Repeat using aluminum foil inserts
  23. Fill all test pans with crust and batter
  24. Ensure the timing is during the changeover from small to large
  25. Run the test pans through the tunnel oven
  26. Freeze the cakes
  27. Data Collection
  28. Remove the cakes from the freezer
  29. Set up a table on side out of the way of the production line
  30. Attempt depanning the test cakes frozen
  31. Two small and two large with parchment paper
  32. Record data and observations
  33. Total time of depanning for each cake
  34. Repeat for aluminum foil
  35. Run test cakes through current depanning process
  36. Four small and four large with parchment paper
  37. Put test pans in the pizza oven
  38. Have the operators attempt to depan the test cakes
  39. Record data and observations
  40. Total time of depanning for each cake
  41. Number of slams to fully depan each cake
  42. Repeat for aluminum foil

-2 small cheesecakes with parchment paper for depanning without the pizza oven

-2 large cheesecakes with parchment paper for depanning without the pizza oven

-2 small cheesecakes with aluminum foil for depanning without the pizza oven

-2 large cheesecakes with aluminum foil for depanning without the pizza oven

-4 small cheesecakes with parchment paper for depanning with the pizza oven

-4 large cheesecakes with parchment paper for depanning with the pizza oven

-4 small cheesecakes with aluminum foil for depanning with the pizza oven

-4 large cheesecakes with aluminum foil for depanning with the pizza oven

Total: 24 cheesecakes (12 large,12 small)
