SUMMARY OF JOB RESPONSIBILITIES:

  • Ensures exceptional dining experiences for Residents, their Families, and Laurel Lake Guests by providing a variety of high quality consistent menu items prepared in-house using creative culinary tecniques while staying within the given budgetary guidelines.

QUALIFICATIONS

EDUCATION:

  • Must be able to read, write, speak and understand the English language
  • Must have working knowledge of HACCP and OSHA protocols
  • Must have current Serv-Safe certification

EXPERIENCE:

  • Must possess minimum of 5 years experience in Finer Dining cooking
  • Must possess minimum of 5 years experience in a Kitchen Supervisory roll.
  • Years of experience above required may be substituted for educational requirements

KNOWLEDGE AND SKILLS:

  • Must be able to demonstrate effective reading, writing, speaking and analytical skills.
  • Must be a detail oriented person and be able to perform duties with great accuracy each day
  • Must be able to work overtime, holidays, weekends as assigned
  • Must be able to interface with people at all levels and with residents in a positive and professional manner
  • Must be receptive and adaptive to change

PRINCIPAL JOB ACCOUNTABILITIES:

  • Ensure accurate, consistent preparation of all menu items using standardized recipes and production sheets.
  • Compliance in all areas, with sanitation, food storage, and safety standards as determined by the County and the State.
  • Responsible for ordering and receiving food and supplies within both a budgetary and need based system
  • Responsible for finished presentation and service of meals in all areas.
  • Interviews and hires Cook and Utility positions
  • Supervision, direction, and development of Cook and Utility staff positions
  • Develop and monitor Sanitation and Cleaning duties for the Cook and Utility staff in the Greenwood and Main kitchens to achieve and maintain our Dining sanitation standards
  • Menu item development
  • Regular interaction with residents for feedback and suggestions.
  • Coordinate training of all Cooks and Utility personnel.
  • Responsible for bi-weekly payroll and scheduling duties for Cooks and Utility personnel.
  • Conduct disciplinary action in accordance with the policies and procedure of the Laurel Lake Human Resources Department.
  • Ensure all food storage areas are well maintained and properly organized using labeling and dating
  • Schedule and participate in departmental meetings.
  • Communicate with the Director of Dining for the need of items/equipment necessary for meal prep.
  • Adherence to all safety policies & procedures of the Facility and regulatory authorities.
  • Attendance and participation in in-service training (IST) programs.
  • Reporting of all hazardous conditions or equipment.
  • Reporting of all accidents / incidents.
  • Performance of other duties as necessary

  • Works beyond duty hours, on weekends, holidays, and in other positions temporarily, when necessary.

Maintain Serv-Safe Certification as required
