Job Title: Sous Chef

Salary: Discussed at interview

Hours: 35 per week over 7 days

Responsible To: Head Chef

Aims of the post:

The café restaurant will offer high quality local produce and provide a relaxed place for people to meet friends. It will provide a wide range of snack, meals and a take away service and will be managed by a suitably Head Chef who will have responsibility for the operation of the cafe restaurant and for staff training. To work alongside the Head Chef to support ongoing trainee development.

Duties will include

·  Assist Head Chef in daily running of kitchen, including managing kitchen staff in the Head Chef’s absence

·  To supervise and assist with trainee development

·  Maintaining Food Safety Policies, HACCP/Cooksafe and COSHH

·  Food preparation, including helping to train new members of staff

·  Assist with menu and recipe development

·  Assist Head Chef in stock and budget control and ordering from suppliers

·  Managing of service, including evening functions

·  Maintain a clean working environment, setting a good working example to other members of staff

·  To undertake any other duties as deemed appropriate from time to time within the needs of the Council of Voluntary Organisations (East Ayrshire) Ltd

PERSON SPECIFICATION

Essential / Desirable
Qualifications / Qualified to SVQ Level 2 Professional Cookery or equivalent.
Intermediate Food Hygiene qualification. / Qualified A1 Assessors
Experience / At least 3 years experience in a professional kitchen.
Previous experience of working in a leadership role.
Experience of working on functions and events. / Experience of working in third sector
Experience of delivering training and supporting trainees
Knowledge / Record of Continued Professional and Personal Development
Understanding of HACCP and COSHH principles. / Knowledge and understanding of the third sector
Skills and attributes / Literate and numerate with good interpersonal and ITC skills
Ability to work flexibly and on own initiative within the confines of the post
Excellent communication and diplomacy skills
Good organisational skills
Willingness to learn and share knowledge with others
Reliable and self-motivated
The ability to demonstrate personal values that promote respect and dignity
The ability to motivate, encourage and lead a diverse team
Ability to work on own initiative
