Cake Decorating takes a mind of imagination, a careful hand, and complicated skills to produce an edible piece of art. Decorating can take many forms, from piping, frosting roses, and creatures and people made from fondant. TLC’s “Cake Boss,” is a bakery located in the heart of downtown Hoboken, New Jersey across the bay from Manhattan and New York City. Hoboken is best known for the birthplace of Frank Sinatra and baseball. It was opened by Carlo Guastaffero in 1910, taken over by Bartolo Valastro Sr. in 1964. In 1994 Buddy Sr. passed away leaving the bakery in the hands of his large Italian family and his 17 year old son, Buddy, who had an immense amount of talent and practice. Today, Buddy Jr. runs the bakery with his “familia.” Their cakes & pastries have been featured on The Today Show, Good Morning America, The View, & The Sopranos. The bakery produces thousands of biscotti, chocolate covered strawberries, pastries, éclairs, tarts, lobster tails, wedding cakes, and many other specialty cakes for many organizations, and famous people. Frosting roses are a favorite of Buddy’s and are quite simple to make with practice.

Vocabulary

Ganache: is a glaze, icing, or filling for pastries made from chocolate and cream. Its origins date to around 1850, when it was invented in either Switzerland or France. Ganache is normally made by heating heavy/double cream, then pouring it over chopped dark semi-sweet chocolate. The mixture is stirred or blended until smooth, with liqueurs or extracts added if desired.

Royal icing: is the icing of choice for piping, as it sets hard, has a smooth consistency and is neither too runny nor too stiff. To make it, beat an egg white until stiff, then add sifted pure icing sugar and lemon juice alternately while beating until the desired consistency is reached. Royal icing should be just stiff enough that it does not drop off a spoon held upside-down.

Mousse: is a stable prepared food that incorporates air bubbles to give it a light and airy texture. Depending on how it is prepared, it can range from light and fluffy to creamy and thick. A dessert mousse is a form of dessert typically made from egg and cream (classically no cream, separated eggs, sugar, and chocolate or other flavorings), usually in combination with other flavors such as chocolate or puréedfruit.

Fondant: commonly used to decorate wedding cakes. It includes gelatin & food-grade glycerin, which keep the sugar pliable & creates a dough-like consistency. Rolled fondant is rolled out like a pie crust & used to cover the cake. It gives a cake a smooth appearance.

Fold or Folding:The gentle stirring of liquid ingredients. Used to avoid agitating food stuffs or reducing a mix's volume of air bubbles

Pipe:The act of squeezing a foamed or soft ingredient through a bag and nozzle to form various shapes. i.e. whipped cream or mash potato

Carlo’s Bakery & Cake Boss

Carlo’s is a family owned bakery that produces what many say are the best tasting, highest quality wedding cakes, specialty cakes and baked goods in New Jersey. Carlo’s, originally opened by Carlo Guastaffero in 1910, was acquired by Bartolo Valastro Sr. in 1964. Since the untimely passing of Bartolo Sr. in 1994, Mary Valastro, the wife of Buddy, along with her daughters, Grace, Maddalena, Mary, and Lisa, her son, Bartolo Jr. “Buddy” Valastro, and their spouses have maintained the business.Within this North Jersey, square mile town, Carlo’s has become a landmark establishment providing it’s customers with elegant wedding cakes, buttery crumb cakes, freshly filled cannolis, flakey lobster tails, and a large variety of cookies and pastries.
