Executive Chef Job Description
The Executive Chef (EC) is responsible for all food production including the restaurants, banquet functions and all other F&B outlets including the Pool Snack bar and all club events throughout the year. He or she is a hands-on working Chef that leads by example in production, training and team building in all aspects of the back of the house responsibilities. He or she must drive and challenge themselves and staff on a culinary program of continuous improvement. The EC is responsible for ensuring that all the food produced and served is consistently outstanding from the everyday menu items and specials to upscale specialty dinners and special events.
The EC works closely with the front of the house staff and management to ensure delivery of top quality, consistent, creative and contemporary fare along with traditional country club offerings. He or she will take ownership from production to the final delivery of the end product. Food offerings must be varied and seasonal with multiple daily specials and high end presentation throughout. He or she must follow the concept of continually exceeding expectations for both members and their guests.
The EC must have a proven track record in controlling food and labor costs and must keep control of and minimize waste in the food production process. He or she will be responsible to manage and meet approved budgets and scheduling throughout the year.He or she will be fully responsible for all back of the house sanitation, safety and cleanliness.
Qualifications
Must be a strong culinarian with a passion for continuous self-improvement and team building. The candidate must have strong management skills in leadership, budgets and culinary finance and people skills. Have experience as an Executive Chef in a premium similar size club or as an Executive Sous Chef in a larger club with the ability to move up to the EC level and position. He or she must demonstrate culinary competence across different ethnic and cultural areas including wine and food pairings.
Educational and certification qualifications
The position requires an Associates or Bachelor’s degree in culinary arts. Candidate should have 8-10 years relevant experience or any equivalent combination of experience and training that provides the required knowledge, skills and abilities. Candidate must be certified in food safety.
