CONCESSION STAND PROCEDURES

Please arrive 30 minutes prior to game time.

The combination to unlock the coolers and the propane is under the basket of cleaning supplies (in cupboard under sink). Use the combination provided to open refrigerator locks. You must be sure the code is set to where it says MASTER on the lock. Money pouch is in bottom of refrigerator. Please count money and record on concessions tally form in money pouch.

DO NOT LEAVE MONEY OR CONCESSION STAND UNATTENDED DURING GAME.

Cold weather only or if you get a request for hot beverages:

1.  Fill the coffee pot with water and turn on, to use for mixing (hot chocolate. Make individual cups and use a plastic spoon or stirrer to mix. When the individual packets run out, please use the can of hot chocolate powder by the coffee machine.

2.  To prepare the Keurig for making coffee, fill the water reservoir to the max-fill line and turn on the power. When the light indicates water is ready, lift silver arm, insert K cup pod, press arm down firmly. Place coffee cup on tray under drip spout and press middle button to precisely fill cup. Do not use any other button or cup will not fill properly. Please display examples of K-cups on the food tables so people know what flavors we have.

3.  Ask announcer to announce coffee and hot chocolate are available.

Turn on warming oven by flipping switch at the bottom to the up position. Turn to setting 6. Place water in warming unit. The oven will be used for keeping hamburgers and hotdogs warm and moist. It is important to monitor the water in the bottom tray, refill as needed.

GRILL - propane tanks are locked outside of the concession stand in a propane cage; you will need to install on the grill. Spray the grill with cooking spray. Hamburgers are in freezer and hot dogs are in refrigerator. Aluminum foil should be used to line the grill tray underneath the tray itself. Grill according to grilling instructions (attached to grill). The lighter, utensils, and cooking spray are located with the grill. Use plastic gloves to handle food.

Please start with around 5 hamburgers (add cheese to 2 of those) and 5 hotdogs. Add more food to the grill as items sell. Put cooked meat in an aluminum pan, cover with foil and place in warming oven.

Set up tables and chairs outside the concession stand. Place price list on table. Display K cups for coffee.

On one table, place one of each beverage on table for display and 1 of each kind of coffee K cups. Place other various items on table. If it is warm outside, you may want to just display one (each) of the chocolate items.

Place condiments and napkins out on the other table. Put buns, cheese, and foil sheets next to the grill.

Place spirit wear/decals out on table. (Box with magnets/decals is in the cabinet under the microwaves). Please put money in the pouch and record any items sold on the concessions tally sheet in the pouch. The price list for these items is in the box. Checks should be made out to NTBF.

Licorice will be on hand to give to anyone who retrieves a foul ball FREE OF CHARGE!

CLOSING CONCESSION STAND

Turn off the coffee pot and empty it. Turn off the Warming oven. Turn off Keurig and empty any water left in reservoir, leaving top of reservoir cracked so it can air out.

During the last two innings, begin putting drinks, candy and condiments/cheese away. All food should be placed in the cooler on right. Clean up where necessary using cleaners under the sink.

PLEASE TURN OFF GAS ON PROPANE TANK. The propane tank needs to be removed from the grill and placed back into the propane cage and lock it. Use the grill brush to clean the grill.

Fold up tables, chairs etc, and place back in concession stand.

Please clean counters and be sure that any trash around the concession stand is cleaned up and placed in large trash cans outside the building. DO NOT leave any trash inside the concessions stand.

Count concessions money and record amount on ledger in pouch. If you have any sales of window decal/spirit wear, record in the space provided on the concessions tally form. Place money pouch in refrigerator and lock BOTH coolers. Spin the code so that it is different than the one that opens the coolers.

Make sure there are hot dogs, hot dog buns and hamburger buns (from freezer) in refrigerator for the next game. All hamburgers stay in the freezer.
