Chicken Avocado Pitas

Ingredients

  • ½ pound shredded cooked rotisserie chicken
  • 2 avocados, hollowed and cut into small pieces
  • ½ cup plain Greek yogurt
  • 1 teaspoon cilantro, divided
  • 1 teaspoon garlic salt
  • 6-8 cherry tomatoes, quartered
  • 4 slices of thin baby Swiss cheese
  • Juice from half a lemon
  • 4 whole wheat pita pockets
  • 1 tsp. extra virgin olive oil

Instructions

  1. Put 1 piece of Swiss cheese into each pita pocket.
  2. In a small bowl, combine Greek yogurt and garlic salt. Set aside.
  3. In a medium size bowl, combine avocado, tomatoes, lemon juice, and half of the Cilantro. Set aside. In a skillet, brown the cooked chicken with the olive oil over medium heat for 3-4 minutes. While cooking, sprinkle with half of the cilantro.
  4. Take off of heat and add ¼ of the chicken to each pita.
  5. Top the chicken with a drizzle of the yogurt mixture followed by a large spoonful of the avocado mixture, all within the pita pocket. Can be served cold, or grilled on a sandwich maker/foreman grill for 2 minutes to serve warm.

In 2010, heating equipment was involved in an estimated 57,100 reported home fires in the US, causing 490 deaths, 1,540 injuries and more than $1 billion in property damage. For your safety, follow these tips.

Select space heaters that:

*Have a guard around the heating element to protect kids and animals.

*Have been certified by a nationally recognized testing laboratory.

*Are the correct size for the area you are heating.

Show everyone in your home how to use the heater properly.

Never leave heater running when you leave the area or go to bed.

Having a Clutter Free Home

If you have made the decision to de-clutter your home,here are some tips:

Task #1 - Day #1 – (you are only doing 1 task today)– Every night before you go to bed, tidy up the bathroom. Put away everything on the counter and the floor every single night.

Task #2 –Day #2 – (add this task to task #1, so you are doing 2 tasks today) Find 5 things that are randomly lying around the house and put them away if you are keeping them. Here are some tips to help you decide whether or not to keep something:

*ask yourself: Do I use it? Do I love it? Would I buy it again?

If you can’t say yes to all three of these questions then you should let it go.

Task #3–Day #3 – (add this task to tasks #1 & #2 so you are doing 3 tasks every day after)Do all dishes and tidy up the kitchen every evening, put away 5 random items lying around the house and tidy up bathroom. If you get in the habit of doing these things each and every night, your house will begin to be organized and you will feel so much better about yourself and your house!

Northeast Nebraska Community Action Partnership (NENCAP) will start preparing taxes end of January. Offices will be preparing basic tax returns. Please contact the office in your area for more information and to set up an appointment. Some of NENCAP’s other programs are: Commodity Supplement Food Program, WIC, Health Services, Weatherization, Head Start and Navigator.
