Roasted Vegetable Salad with Lemon Mint Dressing

Ingredients

6-8 Brussel sprouts

½ Red pepper

1 small head Broccoli

½ Yellow squash

½ Tomato

½ Zucchini

1 large bowl Mixed greens ( I use the baby spinach and baby kale combo. Any mix is good. It’s best to choose one with dark leafy greens)

1 Lemon

4 tablespoons Olive oil

2 tsp. Black pepper

2 tsp. Kosher salt

2 tsp. oregano

4-5 Fresh mint leaves

Directions

Preheat oven to 375℉. Cube all the veggies and combine in a large bowl with 1 tsp. each of black pepper, oregano, and salt and 2 tablespoons olive oil. Mix until all veggies are marinated. Spread veggies on a greased baking pan and cook for about 35 minutes or until roasted. In a blender, blend squeezed lemon, 2 tablespoons olive oil, mint leaves, and 1 tsp. each of black pepper and salt. In large salad bowl add mixed greens. Once veggies are done place on bed of greens and drizzle dressing. Add grilled chicken, salmon, or steak tips for the perfect lunch or dinner. Enjoy!
