Uncle GIUSEPPE’S Turkey

THANKSGIVING RECIPE
Uncle GIUSEPPE’s Turkey
Ingredients:
•16-18 pound Uncle G’s Fresh Turkey
•1 ½ tablespoons dried sage
•1 ½ tablespoons crushed rosemary
•½ tablespoon kosher salt
•1apple
•¾ cup olive oil
•½ cup white wine
•2 tablespoons of butter
•1teaspoon garlic powder •1 ¼ cups water
•1 package of cheesecloth
Directions:
•Preheat oven to 350° F
•Rinse turkey and remove gizzards, pat dry of excess water
•Mix sage, rosemary, garlic powder, salt, olive oil and wine in a small bowl for marinade
•Lift the skin and rub marinade between the meat and skin
•Rub entire top of bird with the marinade
•Place one tablespoon butter underneath skin
•Place one tablespoon butter on top of skin
•Add ¼ cup water to the remaining marinade in bowl
•Dip cheesecloth into marinade and place soaked cloth on top of turkey
•Stuff turkey cavity with apple
•Place turkey, remaining marinade, one cup water, and one quartered onion in roasting pan
•Place turkey in the oven and roast 20 minutes for every pound
•Remove cheesecloth during last 45 minutes of cooking time
•Insert an instant read thermometer into the thickest part of thigh (but not the bone) and cook until internal temperature reaches 165° F
•Allow turkey to sit for at least 20 minutes before carving
