The Role– Chef de Partie

We are currently seeking a talented Chef de Partie who is passionate about food and fresh produce. You will assist the Head Chef and Sous Chef with the preparation of food for the New Lanark Mill Hotel restaurant, bar, lounge and for the catering required for conferences and events being held within the hotel and within the visitor centre event rooms.

Scope

  • Set up and prepare ingredients for breakfast, lunch and dinner services as directed by the Head Chef or Sous Chef.
  • Cover some aspects of the Sous Chef role as appropriate and as directed.
  • To supervise the activities of all the Commis Chefs & Kitchen Porters during the shift in the absence of the Head Chef or Sous Chef
  • Take responsibility for the ordering of stock as required in the absence of the Head Chef or Sous Chef
  • Ensure that necessary paperwork, administration, controls and records are undertaken and maintained as directed by the Head Chef to include Health & Safety, Food Safety and any other as requested.
  • Prepare food for each service, ensuring a high standard of quality at all times.
  • Ensure that food preparation areas are kept clean and tidy at all times.
  • Ensure that food is cleared away at the end of service and that food which can be re-used safely is utilised.
  • Ensure that requisitions for food are received by the Head Chef and that freezers and refrigerators are replenished as appropriate.
  • Carries out food preparation and cooking within the hotel kitchen, ensuring recipes are followed consistently to keep the quality and cost constant.
  • Controls wastage and records / reports all wastage.
  • Prepares food for service appropriate to sales levels.
  • Ensures stock rotation is followed and all store rooms, fridges and freezers are in order.
  • Communicates via team meetings, one to one meetings, training sessions, notice boards and written
  • Undertakes training, where required, relevant to job role.
  • Adheres to Health and Safety policies that are in place, at all times. Ensures awareness of the risk assessments, method statements and training requirements relating to the role.
  • From time to time, undertakes other duties as may reasonably be requested by the Head Chef or Sous Chef
  • Prepare items for restaurant, bar functions, events and other special occasions as directed by the Head Chef or Sous Chef.
  • Report any defects in equipment to the Head Chef.
  • Ensure high standards of customer service are maintained at all times.

Knowledge, Skills, Qualifications and Competencies

  • Must have a good level of education, preferably with a catering qualification.
  • A good understanding of food preparation
  • Strong awareness of food hygiene requirements and health and safety issues within a catering environment.
  • Minimum of basic level food hygiene certificate
  • Flexible in approach to work and hours of work. A willingness to train and learn new skills
  • Must have a full clean driving licence.

£16,500 per annum depending on experience
