The Kitchen is the Heart of the Home

−Fisher Paykel’s ‘Social Kitchen’ encouragespeople to get back in their kitchens −

The Pommery Dorset Seafood Festival, taking place over the weekend of July 8th & 9th in Weymouth’s historic harbour,will host the popular ‘Social Kitchen’ from sponsor Fisher & Paykel. The Social Kitchen aims to encourage people back into their kitchens, be it to cook, socialise or create – the kitchen is the heart of the home.

Fisher & Paykel is renowned for designing products that are both stylish but incredibly practical and user-focused. Turning the everyday routine into an enjoyable experience, taken on with ease and speed. Products are adaptable, functional and durable created with an understanding of the dynamic nature of modern living.

Much like the BIG Lunch, an initiative from the Eden project on the 16th – 19th June, Fisher & Paykel’s Social Kitchen aims to bring people back into their kitchen, particularly when it comes to food! From dinner parties where everyone ends up stood in the kitchen as the host adds the finishing touches to the meal, to the kids at the kitchen table completing school projects whilst Dad throws together dinner. The kitchen plays many roles and should work in tandem with busy lives, creating an easy, fun environment for all those that congregate there!

The Social Kitchen at this year’s Pommery Dorset Seafood Festival offers festival-goers the opportunity to see Fisher & Paykel appliances in action, as well as learning about how to create some amazing meals with local produce. An array of incredible chefs are lined up to demo and chat through top tips, secret ingredients and their own personal favourite dishes. Fisher & Paykel’s chef, Clover Hutson, will be on hand to cook with guests – with guests enjoying the results at the end! A real hands-on, educational experience to take home from the Pommery Dorset Seafood festival.

Fisher & Paykel chef, Clover Hutson whets the appetite with a delicious Goan Fish Curry recipe:

Goan Fish Curry

Ingredients

  • 2 sliced shallots
  • 2 long green chillies, thinly sliced
  • 2 garlic cloves, finely chopped
  • 4cm piece fresh ginger, peeled and grated
  • 2tsp ground cumin
  • 2tsp ground turmeric
  • 2tsp garam masala
  • 2tsp ground coriander
  • 2 cardamom pods, split
  • 2 bay leaves
  • 140ml full fat coconut milk
  • 400g chopped tomatoes
  • 5tbsp vegetable stock or water
  • 600g skinless haddock fillet, or talapia or river cobbler, any firm white fish cut into chunks and you can also add king prawns and crab - your preference
  • Juice of half a lime
  • 2tbsp fresh chopped coriander
  • Rice to serve

Method

In a large heavy based saucepan add a good glug of rapeseed oil, then fry the onion over a medium heat stirring frequently for about 10 mins until softened and beginning to colour.

Stir in the chillies, garlic, ginger, ground spices, cardamom seeds and bay leaves then cook for approx 1 min.

Pour in the coconut milk, chopped tomatoes, stock or water then bring to the boil. Reduce the heat and simmer half covered for approx 5 mins.

Add the haddock or firm fish and continue to simmer half covered stirring occasionally and taking care not to break up the fish pieces. Cook for about 6 mins the add the raw prawns and cook for another 4 mins. Cook for approx 10 mins in total with or without the prawns. Making sure the fish and prawns are cooked through.

Season to taste and stir in the lime juice. Serve with sprinkled coriander and rice. And a pile of hot chapatis!

Charity Information - The Fishermen’s Mission

The Fishermen’s Mission is the only fishermen’s charity that provides emergency support alongside practical and emotional care. It helps all fishermen, active or retired, and their families.It does this by:

  • Offering immediate assistance, day or night, to the families of fishermen who have been killed or seriously injured
  • Looking after the survivors of fishing boat accidents
  • Helping injured or ill fishermen to find medical help
  • Finding emergency housing and food if necessary
  • Supporting fishermen’s families in the case of illness, distress or financial difficulties
  • Alleviating loneliness by visiting retired fishermen and their families at home or in hospital
  • Offering welfare and support to overseas fishermen working in the UK fishing industry, especially those who have to live onboard boats
