SWEET POTATO PANCAKES
1½ c flour
3½ tsp baking powder
2 tbsp sugar
½ tsp cinnamon
1/8 tsp ground cloves
1/8 nutmeg
1 large mashed sweet potato (see below)
2 eggs, beaten
1¼ c milk
¼ cup butter
To prep sweet potato:
Bring several inches of water to a boil in a medium saucepan.
Peel, then cube potato into 1” chunks.
Add potato pieces to boiling water and cook until tender, about 15 minutes.
(Pieces are tender when a fork can pierce them with little resistance).
Drain. Cover with cold water to stop cooking. Drain again.
Mash the potatoes until smooth.
To prep batter:
Meanwhile, sift together, flour, sugar, baking powder, & spices.
In another bowl, mix together eggs, milk, and melted butter.
When mashed, thoroughly combine potatoes into the egg mixture.
Stir potato mixture into the flour mixture to form a batter.
DO NOT OVERMIX.
Heat electric skillet to 350o. Add 1 tbsp oil and heat oil.
Drop approximately 1/8 cup of batter onto the hot skillet, allowing room for each to expand.
Turn pancakes once - when the bubbles that form on top begin to break.
DO NOT PRESS DOWN – this will make them dense and heavy.
Remove to a warmed platter in a 200o oven. Continue making pancakes until all batter is used.
Present platter for grading.
