COURSE DESCRIPTION

This 3 credit applied course builds on theory-based skills gained from the nutrition course, HPRO/PUBH 304. Students will become proficient in the use of laboratory equipment in the field and Public Health Lab to engage in community nutrition outreach by assessing body composition, evaluating diet history, and providing nutrition education and counseling to promote sound dietary practices. (Prerequisites PUBH/HPRO 304)

COURSE OBJECTIVES

This course will:

  • expose students to laboratory equipment in the field of public health and nutrition.
  • enable students to use public health theory to provide nutrition education and effect behavior change.
  • enable students to complete the ServSafe® Food Handler Program.
  • provide a core group of students to staff the Public Health laboratory.

STUDENT LEARNING GOALS

Goal 1: Students participate in experiential learning activities that complement and build on the knowledge and skills relevant to their academic program and/or career goals.

Goal 2: Students critically reflect on the relationship between and among experiential learning, their academic experience and the world in which they live.

STUDENT LEARNING OUTCOMES

Upon completion of this course, students will:

  • demonstrate the knowledge and skills obtained through participation in experiential learning activities that are relevant/pertinent to their academic programs and career goals (SLO 1.1).
  • demonstrate a high level of comprehension and skill in connecting theory with practice which is correlated to their level of participation in experiential learning activities (SLO 2.2).
  • operate the Inbody 570 bioelectrical impedance machine and be able to interpret the data.
  • useNutrition Maker Plus by BioEx Systems, Inc, enter and interpret data.
  • explain effective ways to handle conflicts in relationships.
  • assess health and nutrition status of diverse groups of individuals.
  • communicate effective health and dietary education for healthy behavior change.
  • demonstrate healthy food preparation techniques.
  • earn the ServSafe® Food Handler Program certification after completion of the program.

CLASS REQUIREMENTS

Attendance

This class meets regularly and also has a lab staffing component. Students will meet with the instructors 3 hours per week for skill building and instruction for the first 7 weeks of the semester. For the following 7 weeks, students will staff the lab for 6 hours a week.

Regular class attendance and maintaining a schedule will be expected throughout the semester. If at any point a student misses over 25% of scheduled meetings times s/he will receive an F as their final grade. It is important to be on time for class and present for information on upcoming assignments and exams. If you miss a class it is your responsibility to obtain the notes from a classmate and to schedule coverage.

Excused absences only include university sponsored events and your illness. Please be sure to provide documentation ahead of time for a university-sponsored event.

Confidentiality

  • As an individual working in the Public Health Lab, please remember that any information gathered should remain confidential, meaning that the information cannot be shared outside of the lab. Please remember that you cannot divulge information discussed by participants in the counseling and education programs.

Equipment Usage

Please remember to:

  • review the Public Health Lab policy, attend training and read all the manuals before usingelectronic equipment.
  • uphold the policyguidelines that only authorized users can use the equipment and be in the lab.
  • ensure all equipment is cleaned at the end of the work day
  • take inventory of the lab equipment and supplies at the end of the day and when you open the lab for the day.
  • lock up the laboratory after your scheduled time.

You MUST have a reliable Internet source to check Moodle and your CCU e-mail account. All quizzes and some assignments will be taken on Moodle.

Citation format

Please note that the Public Health program uses the American Psychological Association (APA) 6th ed. citation format. Every effort has been made to help you use APA citation format for class papers, assignments and references by having guides & examples available to you on Moodle, through Purdue Owl, and in the library. LAB RESPONSIBILITIES

The purpose of the class is to prepare students to use and staff the Public Health Lab to deliver health and nutrition education to students, faculty, staff and community members. Students will be responsible for working 6 hours per week in the lab.

COURSE ASSESSMENT & EVALUATION

Quizzes (20points)

Quizzes are an important component of this course. These are five (5) quizzes assigned for completion outside of class or on Moodle. These are based on course readings, equipment understanding, class discussions and participating in observations.

Nutrition Counseling Assignment (15 points)

You will be required to complete a mock nutrition counseling session using the In-Body 570 and Dietary Analysis software. You will be evaluated on your intake approach, counseling skill, and education provided. Your performance will be recorded and constructive feedback will be provided.

ServSafe® (5points)

Undergo completion of the ServSafe® training and take the certification test.

Lab Participation (60points)

Participation is an important part of the course grade as it is an experiential course.You will work with your classmates to staff the lab for 25 hours per week. Each of you is expected to spend 6 hours per week staffing the lab to ensure coverage.
