6 x Prawn Tails / Seasoned Flour / Egg wash
Crumbs / Savoury Rice / Tartare sauce

6 scampi prawns, butterflied, heads & skins removed (tails still on)

Crumbed in a seasoned flour & egg mixture

Deep fried until golden brown

Served on a side plate, around a dome of rice

Garnish: A lemon wedge on the side & sprinkled with parsley

Served with: A ramekin of tartare sauce

Crumbed Mushrooms

12 to 15 button mushrooms (depending on size)
Egg wash / Seasoned flour
Tartare sauce / Crumbs

Crumbed in a seasoned flour & egg mixture

Deep fried until golden brown

Served on a side plate, around a ramekin of tartare sauce.

Garnish: Lemon wedge & chopped with parsley

Calamari

Question: Grilled JD, Cajun style or deep-fried?

150g calamari rings / Seasoned flour
Tartare sauce / If Grilled/Cajun: Cajun spice

Deep Fried: Tossed in seasoned flour mixture

Deep fried until golden brown

Grilled/Cajun Fried (on flat top) until tender, sprinkled with JD’s spice or Cajun spice

Served on a side plate around a dome of rice

Garnish: A lemon wedge & chopped parsley

Served with: A ramekin of tartare sauce

Squid Heads

Question: Grilled JD, Cajun style or deep-fried?

150g squid heads / Seasoned flour
Tartare sauce / If Grilled/Cajun: Cajun spice

Deep Fried: Tossed in seasoned flour mixture

Deep fried until golden brown

Grilled/Cajun Fried (on flat top) until tender, sprinkled with JD’s spice & Cajun spice

Served on a side plate around a dome of rice

Garnish: A lemon wedge & chopped parsley

Served with: A ramekin of tartare sauce

Chicken Livers

120g cooked chicken livers / Lemon & Herb
Milk/cream Mix / Peri-Peri

Livers pan-fried with peri-peri, garlic butter and lemon & herb in cream

Served in a potjie (lid on), on a serviette, on a dinner plate.

Served with: A warm Maputo Roll & a mini butter, steak knife & soup spoon.

Cheesy Prawn Tails

6 x JD Prawns – de-shelled / Garlic butter / Calamari Spice
Cheese sauce / Cheese mix / 4 x slices Maputo loaf

Prawns are sautéed in garlic butter & JD’s spice

Added to a delicious creamy cheese sauce

Topped with grated cheese which is then melted in a salamander.

Served in a 3 divisional snail dish, with a serviette, on a dinner plate.

Garnish: Chopped parsley

Served with: 4 Slices of Maputo loaf

Mussel Pot

150g Full Shell Mussels / Garlic & Herb sauce
Cream and milk mix / 1 Maputo roll

Mussels are cooked in a creamy or garlic & herb sauce

Served in a HOT potjie pot (lid on), which is placed on a serviette, on a dinner plate

A steak knife & soup spoon is placed on the plate

Served with: A Maputo roll, a block of Butter (placed next to the pot on the plate)

Oysters

Fresh Oysters served in the shell

(Recommended – 6-12 Oysters) – Customer is charged for each oyster ordered.

Oyster is served open on an s/s pan, on a bed of ice

Served with a snail fork

Garnish: 2 lemon wedges per 6 oysters

Served with: A snail fork and tobasco sauce

Maputo Breads

Question: Would you prefer a roll or a Maputo loaf?

1 x Maputo bread loaf or 1 Maputo roll

Ladled with garlic butter

Topped with cheese mix

6 diagonal incisions are cut into the loaf (4 incisions into a roll)

Cheese: Topped with cheese, grilled until the cheese melts

Loaf: Served on a dinner plate.

Roll: Served on a side plate

Steak knife placed into the centre incisions (cuts)

Garnish: Sprinkled with chopped parsley

Sharing: Give each guest his or her own side plate. Place the loaf in the middle of the table

Blue Cheese Snails
