1 / What are the current sales for the PSP Cafeteria ~ by month for period of Jan. 2017 – Thru Mar. 2018?
March’s numbers only as an example – Breakfast orders were 4,982 divided by 22 days of operation = 226 per day, Lunches were 4874 divided by 22 days of operation = 221 per day
2 / Will the land phone line remain?YesAnd if so how many lines?Not sure
3 / Is internet to remain?Yes
4 / Will Carli’s equipment, i.e. Ice cream freezer and any other be replaced by PSP Venue to maintain at least the Current equipment and service level? Anything Carli has would not remain; however, PSP owns almost everything.
5 / Are point of sale registers included in the equipment? No If not with PSP install?No
6 / What is the initial beginning date of the contract or tentative beginning date?The current contract ends on June 20, 2018,so depending on PSP background checks on the new vendor and employees that will determine the start date.
7 / What is the install length of time window for the new vendor?That will be determine once the vendor is chosen.
8 / Would the vendor have access to the venue space during non-operating hours ~ Sat. or Sun. and late night?Weekdays?Yes
9 / What is and who is “Blind Vision” and what role do they play in the agreement? BBVS operates the Business Enterprise Program (BEP) as the designated state licensing agency under the Randolph-Sheppard Act. They have the priority to operate all vending facilities on Commonwealth properties. If they are unable, then BEP may waive the priority for a vending facility services with other vendors.
10 / Is there a preventive maintenance agreement with a firm to service equipment on a regular basis? On some pieces yes; however, PSP owns all the equipment and we are responsible for all repairs.
11 / Is the building ever closed? ~ snow, weather, hurricane, etc. What are the criteria for bad weather to Precipitate a day of closing and “not open"?Listen to ABC 27 news, if it states Offices under the Governor’s Jurisdiction in the Harrisburg area, we are closed.
12 / What operating licenses or permits are required other than the PA Department of Agriculture?In the municipality? Susquehanna Township Board of Health License.
13 / Who is the facilities manager? Robert Hoffman, Dwan Rickard, Mike Fleisher
14 / What are the times the staff can buy food? Is there a graduated time for offices to take lunch? Or is lunch time per office open? Do the office times apply for break as well? B-fast 0700 – 1030, Lunch 10:30 1400. You will get accustomed to when people come in and get a feel for the busy times.
15 / What are the staff shifted counts ~ estimated ~ per day: Day ~? Afternoon ~? Night ~ ? We don’t know, refer to question 1 for approx. totals.
16 / Is the equipment configuration ~ knowing on casters ~ have flexibility for differing position with approval? Yes
17 / Will the internet lines remain available as is for cc transactions?Yes

20 / How would you like us to bid the salad bar? By the pound?
They may price the salad bar as they see fit. If they bring a scale with them they may want to price by the pound. It is their call.
21 / Are we just to make up menus and price or will you give all vendors a hot / cold menu to price? Just not sure how to bid to be compared to others.
Make up a menu that you would typically serve and attach a price to it. (example, Wednesday, meatloaf – mashed potatoes/gravy - corn – roll) etc. Give me more examples than the one I showed. A 5-day menu would be great. (also, want to see the price of ala cart, example, burgers, etc.)
22 / We have a copy of the current vendors menu’s and prices. I am assuming you know what their sales are since they pay a percentage. We would really like to know what the average daily or weekly or monthly sales are so that we can be sure how to properly bid this. Staffing is based on volume and without any knowledge of this, it is hard to bid fairly.
PSP has never asked for the revenue collected in the cafeteria, so we have no knowledge from previous vendors.
