Scratch Baking Mix Recipes

Cake mixes are easy, lets face it, but not having control of what’s in them bothers me. Here I try to feed my family healthy, but I don’t mind whipping out that cake mix with all kinds of preservatives inside. This caused me to rethink things. If I want to make my life easy and feed my family healthy, then why not make my own baking mixes! Great idea, now time to execute the plan!

I am a BIG fan of WinCo’s bulk section, so my little one and I set out to buy our ingredients. The most expensive item was the Dutch cocoa, which was $4.35/lb. Not all our baking mixes have cocoa, which makes them a whole lot cheaper, but TODAY we are using cocoa! Just keep in mind when you make other mixes like oatmeal cookies, spice cake, and so forth they will be a lot cheaper.

Before you start putting your ingredients in the bag, write down your add ins, instructions, and don’t forget to put the date! (Each baking mix has a 6 month shelf life!)

Next, create an assembly line, it makes this whole experience go by more quickly. Just make sure you do one recipe at a time!

Brownies

Ingredients:

1 c. white sugar

1/2 c. flour

1/3 c. cocoa

1/4 tsp. baking powder

1/4 tsp. salt

Add ins:

2 eggs

1 tsp. vanilla

1/2 c. veggie oil

Directions:

Add wet ingredients to dry, mix well. Pour into a greased 8×8 baking pan. Bake at 350 degrees for 20 minutes!

Chocolate Cake

Ingredients:

1 3/4 c. white sugar

1 3/4 c. flour

3/4 c. cocoa

1 1/2 tsp. baking powder

1 1/2 tsp. baking soda

1 tsp. salt

Add ins:

2 eggs

1 c. milk

1/2 c. veggie oil

2 tsp. vanilla extract

1 c. boiling water

Directions:

Add first 4 add ins to dry mix. Beat for 2 minutes. Then add 1 cup boiling water, batter will be VERY thin (that’s PERFECT!). Pour into greased and floured (2) 9in round baking pans, or (1) 9×13 baking pan. Bake at 350 degrees for 30 minutes, or until an inserted toothpick comes out clean.

Chocolate Chip Cookies

Ingredients:

1 1/4 c. flour

1/3 c. brown sugar

1/4 c. white sugar

1/3 c. chocolate chips

1/2 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

Add ins:

1/2 c. butter, softened

1 egg

1 tsp. vanilla

Directions:

Add wet ingredients to dry mix, stir. Bake at 350 degrees for 10 minutes.

TOTAL Cost for all mixes today: $8.20 divided by 12 mixes = $.68 each! Not bad at all!
