As The Peninsula Hong Kong Celebrates the Launch of its Sister Property in Paris
One of the most eagerly awaited hotel launches of the modern age, The Peninsula Paris will open its doors on 1 August 2014. And to celebrate the birth of its newest sister property, and its first in Europe, The Peninsula Hong Kong is revelling in all things French.
The latest chapter in The Peninsula’s storied history, The Peninsula Paris sets new standards in design, luxury and comfort, bringing an unprecedented level of distinction to the City of Light. Located in a meticulously restored late 19th-century building at 19 Avenue Kléber, just steps from the Arc de Triomphe,the hotel is steeped in history yet discreetly modernised to meet and exceed the needs of the 21st-century traveller.
Formerly the site of one of Paris’ grands hotels, which opened in 1908, the building features Haussmann and Neo-classical details, and has been painstakingly restored by a team of France’s finest artisans who were hand-picked for the project. Six years in the making, the stunning property is a feast for the eyes both inside and out. From its striking façade to interior elements such as fine marble, rich wood panelling and gold-leaf finishing, The Peninsula Paris is the epitome of superlative French craftsmanship.

From Bastille Day on 14 July to 31 August, the spirit of Montmartre will be brought to life in The Lobby. The menu will reflect the theme, featuring French-themedAfternoon Tea and baguette sandwiches – perfect for a European-style lunch or anafternoon tea break.On Saturdays and Sundays, an accordion player will enliven The Lobby with traditional French tunes.
Gallic gastronomy is the order of the day elsewhere at The Peninsula, as the hotel celebrates the flavours of France in its best-loved restaurants. At Gaddi’s, a Paris-themed, three-course lunch menu, priced at HK$ 520* per person, and a selection of French wines by the glass, will be available from Monday to Friday between 4 and 27 August. As ever, there are also a host of premium products from France including oysters, salmon and the famed Canard à la Presse, which is served over two courses and prepared in Gaddi’s duck press from the restaurant’s legendary silver collection, available throughout October and November.
Elsewhere, Felix will present “The French Felix Experience”, an irresistible, five-course dinner menu in the restaurant’s signature, avant-garde style. Highlights of the menu include “Crudité et Croustade”: smoked salmon loin, poached beetroot, carrot rapé, chips, celery salad, fresh grapes, and orange mayo paired with Ruinart Blanc de Blancs Champagne; “Vichyssoise et Paris Shadow”: chilled leek and potato cream soup, poached watershield leaf, pan-seared French duck liver sandwich and bacon powderpaired with 2013 Alain Jaume, Côtes-du-Rhônez– guests can enjoy theParis skyline while savouring this chilled soup that is perfect for summer; “À la Provençale”: tomato-garlic sautéed New Zealand blue abalone, mushroom barley risotto, caviar, tobiko, and garlic chips are paired with 2013 Château Miraval Rosé by A-list Hollywood vintners Brad Pitt and Angelina Jolie. Adding to the heady gastro mix, “Thermidor et Moulin Rouge”: lobster with red sabayon, sautéed mushroom and onion, carrot jelly, and beetroot mashed potato visually references the eponymous cabaret club, paired with a 2011 Clos Du Moulin Aux Moines from Burgundy. In a visionary pairing of the “Navarin”: braised lamb shoulder, herb-crusted lamb loin, butter-glazed vegetables, couscous and harrisa-sour cream, Felix has found its namesake in the 2011 Cuvée Felix de Biac by Château Biac, Côtes de Bordeaux.

As a sweet finale, the “Profiterole et Musée du Louvre”: choux pastry, praline cream, lemon crumble, raspberry-chocolate ice cream, sugar chips and fresh fig features geometric sugary references to I.M.Pei’s Louvre Pyramid, washed down with a lovely 2004 VilmartRatafia, which – although produced in Champagne – is more akin to a sherry than its fizzy cousin. Available from 14 July to 31 August, the menu is priced at HK$ 988* per person, or HK$ 1,488* with wine pairings.
Designed to reflect the glamour and style of Shanghai – “Paris of the East”, the hotel’s much-loved Cantonese restaurant Spring Moon will present a special six-course “Shanghai French ConcessionMenu”, priced at HK$ 1,380* per person, inspired by the unique blend of Parisian and Shanghainese influence in the city’s French Concession from 14 July to 13 August. Dishes include the Trio of Appetisers: Steamed dumpling with minced pork and black truffle sauce, Dried plum and yellow wine-infused duck liver terrine, and Deep-fried pigeon legs with spicy salt. Dishes with a distinctly French-infused bent include Double-boiled Bresse chicken with ginseng in a tureen; Sautéed blue lobster with XO sauce; Steamed French turbot with black beans and olives; and Fried rice with minced lamb and cumin. A classic Crème brûlée made with almonds receives a Chinese twist and is a sweet finish to this unique menu.
And at The Verandah, guests can enjoy a French buffet, cakes and café specialties during September and October.
Those with a sweet tooth will also be well catered for, as Maître Chocolatier Marijn Coertjens is poised to create a replica of the world-famous Eiffel Tower made entirely out of chocolate, which will be on display in The Lobby and in The Verandah Café from 14 July onwards.

Paying homage to the wealth ofpâtisseries that dot villages and cities around France, The Peninsula’s pastry chef will host “MaîtrePâtissier” classes for junior guests. Budding young chefs will be able to try their hand at making some of the pastry classics that are staples of French life, with classes open to children aged between four and 10, and priced at HK$ 880* per child.
And the hotel will also be celebrating the classic French style of facialhair by selling chocolate moustaches for HK$ 40 per piece between 14 July and 15 August, with HK$ 20 from each piece sold donated to Make-A-Wish Hong Kong®.
