Structural studies of red wine solid matter; influence of oenological colloids on flocculation properties.

Project Description :

An opening for a Postdoctoral Fellow is available at the Institute of Chemistry & Biology of Membranes & Nanoobjects at Bordeaux University in collaboration with an industrial partner, Laffort ( Application laboratories of this well-known international company are based in Bordeaux and are specialized in oenological products and wine analysis.

The red wine stability (appearance or not of precipitate) has a strong commercial impact and is correlated with the presence of anthocyans, tannins, polyphenols or colloids. However, the molecular mechanisms leading to precipitate formation are not well understood. The objectives of this postdoctoral training are to characterise by solid and liquid state NMR the molecules involved in precipitates, the influence of added colloids during winemaking, the comparison between aged and young wines and finally the improvement of the red wine stability.

The successful candidates will have access to fully equipped state-of-the-art NMR facility with spectrometers ranging from 100 to 800 MHz, located at the IECB (European Institute of Chemistry and Biology). This NMR platform is part of the French Large Scale NMR Facilities (

Qualifications:
Candidate must have a Ph.D. in Chemistry, Biophysics or in closely related fields. Applicants must understand advanced NMR theory and experiments both in liquid and solid state, and be able to apply advanced NMR experiments to characterize complex systems. The candidate should be able to work independently and participate creatively in refining project directions. The candidate must have good oral and written communication skills, and be able to interact effectively with a broad range of colleagues and industrial partners.

The fellowship is open to candidates of any nationality and selection will be based upon the candidate's research potential. The position can start as soon as possible. The duration of the position will be two years. The annual salary will be of 22 k€ net of taxes.
