CSA Bounty Wk. 6
Pearl Onions-Pearl onions are a mini sweet onion that are good for roasting or sliced thin and added to a salad. Store these in the fridge and treat much like you would the scallions.
Genovese Basil-A classic Italian basil variety. This is very aromatic. With complex notes of clove and licorice it is warm and peppery at the same time. The leaves bruise easily, so we don’t wash these before delivery. Make sure to give them a good rinse before chopping up into your meal. Basil is cold temperature sensitive, so put the stems in a little water and cover with a plastic bag on your counter until ready to use.
Slicing Cucumber-Marketmore 76 variety, is a prolific producer. Expect to see these for many more weeks! These go very well sliced into a salad. You may notice some small brown spots at the ends. These are nothing to worry about and are purely cosmetic, from a beetle that likes cucumbers
Baby Lettuce Mix-This tender mix is made up of 6 different types of lettuce, both green and red oakleaf varieties, plus a green variety called deer tongue which is similar in texture to a baby romaine. Best stored in a plastic bag in the fridge. If you don’t get to it right away and it wilts a bit, wash it in some cold water about 30 seconds and then dry, it will crisp right up.
Tendersweet Cabbage-This cabbage variety is for fresh eating. Its name lends itself very well to its qualities. These cabbages have very high water content so they are great for making sauerkraut, or eating in a slaw. When making a slaw with this variety, lightly salt and press over night to get rid of excess moisture prior to adding slaw dressing. Best stored in the crisper
Zucchini and Patty Pan Squash-As the squash plants mature, the squash grow faster. You may receive a slightly larger zucchini than previous weeks. These are still great for any recipe. You will see a variety of Green & Yellow Patty Pans, yellow “ Slick Pick” squash, and “Raven” green zucchini. You will be seeing these for a while as we have a couple of plantings to get us through the summer. Great for a quick sauté, wonderful in stir fry or even baked into a gratin or to thicken a soup.
Celery-This week’s celery is much smaller than what you are used to seeing in the grocery stores, but I guarantee the flavor is intense. Cut off a little slice and see for youself before adding this to any recipes. Remember, the tops can be treated like and herb and added to finish off some eggs in the morning or a rice dish for dinner for some amazing flavor.
Green Head Lettuce“Concept”, our favorite summer crisp. Great for salad or has a nice crunch to go on sandwiches too. Please make sure to wash this well, we wash it when it comes in from the field, but there are nooks and crannies where dirt and sometime bugs hide. We can’t tell ‘cause we aren’t cutting it up. If you don’t have a salad spinner, might want to get one. It will help you dry the leaves after washing so they hold onto dressing better. Store in plastic in the fridge until use
