Course Description: Biochemistry, physiology and metabolism of carbohydrates, lipids, proteins, vitamins and minerals; nutrient digestion, absorption and transport; nutrient requirements and deficiencies; dietary surveillance; life stage nutrition; evaluation of nutritional claims.

Prerequisites: Texas Success Initiative Complete in Reading.

Recommended: Completion one semester of college-level chemistry and/or one semester of college-level biology.

Objectives/Learning Outcomes:

The student will obtain a basic understanding of the fundamental principles of nutrition. Upon completion of this course, the student will be prepared to continue related course work in the nutritional/health sciences.

Upon completion of this course, the student will be able to:

1.)  Demonstrate knowledge of the macro- and micronutrients, nutrient requirements and deficiencies, nutrient metabolism, appropriate nutrition for different life stages.

2.)  Apply nutritional knowledge to his/her own life in order to analyze personal dietary intakes and to evaluate food labels and validity of nutritional product claims.

Satisfactory knowledge of these principles will be assessed by a score of at least 420 points (60%) on a combination of major exams, assignments and a comprehensive final exam. Exam questions will be drawn from a series of lectures that are based upon illustrations/readings from the text, notes and any additional reading materials provided.

Please turn in 5 Scantron 882-E forms to me prior to the first exam. Do NOT write your name or mark on them in any way.

Grading:

4 Major Exams 400 points A = 629.5 points

Assignments 150 points B = 559.5 to 629.4 points

Final Exam 150 points C = 489.5 to 559.4 points

700 points D = 419.5 to 489.4 points

F = < 419.5 points

The final grade will be determined by dividing the total number of points earned by the total number of points possible (700). YOU are responsible for keeping track of your grades in the course. Do not ask me to calculate your grade for you. ***No extra credit opportunities are available for this course. Additionally, final grades are not ‘curved’ in this course.***

Exams:

Exams will consist primarily of multiple choice questions, but will include some short-answer questions as well. Occasionally, questions of matching or fill-in-the-blank format may be appropriate.

ALL CELL PHONES/ELECTRONIC DEVICES MUST BE TURNED OFF DURING EXAMS! Any means of cheating on any exam will result in an automatic grade of zero for that exam and possible expulsion from the course.

***If you become ill on an exam day, you must notify me via phone or email (or both) BEFORE the test period. Do not wait until after the test period as you will receive a grade of zero for the test in question as well as forfeit the option for a makeup exam. Makeup exams will only be given under extreme circumstances, at the discretion of the instructor, and will not necessarily be of the same format as the original exam. If a makeup exam is granted, it is up to the student to make arrangements to take the makeup within one week of the missed exam. Failure to take the exam within this time frame will result in a grade of zero for that exam.***

Assignments:

Each student will maintain a 3-day food diary at the beginning of the semester. Throughout the remainder of the semester, several related assignments will be given in which the student will evaluate his or her energy, macro- and micronutrient intakes over the course of the initial 3-day period. The number of points available from the food diary, its related assignments and any other assignments will total 150 points. NOTE: The 3-day food record is the basis for all other assignments given in this class; therefore it is essential that the food record be accurate and thorough. Additionally, late work is NOT accepted.

Attendance:

Attendance is required and will be taken daily. Please come to each class prepared and ON TIME. Excessive absences are grounds for instructor-requested withdrawal from the course (see pg. 57 of The Victoria College Catalog). If you miss class, it is your responsibility to acquire the notes, etc. from a classmate. If you know you will be late or if you must leave class early, please inform me prior to the class if at all possible. Finally, please turn off all cell phones/pagers, etc. during class.

Other Course Policies:

If a student does not complete all assigned course work and take all exams, he may apply to the instructor for an incomplete (I) grade. If approval is received, the student has four weeks to fulfill course requirements. Failure to do so results in a grade change from I to F.

If a student drops the course before the end of the first 12 weeks (April 13th), a grade of W is assigned; this grade is not considered in the calculation of grade point average. If a student drops a course after the first 12 weeks, a grade of F or W may be given in accordance with The Victoria College policy.

Students with disabilities must be registered with Jose Sanchez or Brooke Shoemaker in Counseling Services, Administration II building, before classroom accommodations can be provided.
