Meat lab expansion enhances learning experience at Education & Culinary Center

WOOSTER, Ohio – March 7, 2016 – Since opening its doors in 2012, the Certified Angus Beef ® Education & Culinary Center has built a reputation as a playground for beef education and exploration among some of the most notable chefs and butchers around the world.

And thanks to a recent expansion of the hallowed hall of beef, guests now have even greater access to experience premium beef like never before.

Crews recently put the finishing touches on a 1,300-square-foot, chilled meat lab, complete with an overhead rail directly into the cooler to facilitate hosting larger groups and providing more working space for beef fabrication. The addition also allows more space for culinary ideation with the brand’s team of corporate chefs.

Chef Brian Goodman from Cleveland’s James Beard-award winning Greenhouse Tavern recently brought a team of his chefs down to experience the full meat lab experience, to help stay on top of trends and better appreciate the quality measures behind the brand.

“We’re always trying to stay ahead of the curve,” says Goodman, who is Chef Jonathon Sawyer’s right-hand man in all Team Sawyer operations, including Greenhouse Tavern, Noodlecat, Trentina, Sawyer Street Frites, SeeSaw Pretzel, and the Tavern Vinegar Company. “To be able to come here and learn with Dr. Phil (Bass) – it’s so valuable. He’s a rock star in the beef world. We bring our chefs down here to give them a better understanding of why we use Certified Angus Beef ® products in our restaurants.”

The new space also includes a walk-in cooler dedicated to storing hanging sides of beef on the rail and a new observation room so visitors can peek in during teaching demonstrations. The Education & Culinary Center has drawn thousands of visitors to Wooster since opening, functioning mostly as a business-to-business center of beef innovation.

“This will allow us to host multiple groups simultaneously now with separate spaces specifically for our culinary ideation and meat fabrication,” says Brent Eichar, senior vice president of operations. “Teaching has become a huge focus of what we’ve been able to do at the center, so anything we can do to better facilitate our learning environment is invaluable.”
