First Cook / Catering at the Zoo

Position Description:The primary duty of the First Cook is menu preparation and execution for Catering at the Zoo events. A commitment to quality standards and an understanding of event programs and banquet event orders a must.

Position Classification: Part-time seasonal; Employment offer conditional on criminal background check

Reports to:Food Services Manager

Essential Job Functions:

  • Functions as the lead cook and prepares food as outlined in banquet event orders and under the supervision of the Food Services Manager and/or the Banquet Chef
  • Ability to prepare and execute selected catering events in the absence of the Food Services Manager
  • Follows production sheets accurately
  • Able to follow established recipes and provide suggestions for new creations
  • Follows all food handling guidelines in accordance with Department of Health regulations; ensures that others do the same
  • Maintains sanitary conditionsof equipment and work area in line with Department of Health regulations
  • Assists with inventory management to ensure proper rotation and availability of all ingredients as needed
  • Operates all kitchen equipment safely and correctly and ensures others do the same
  • Evaluates all foods before serving to ensure highest standards of quality and presentation ; maintains appropriate portion controls
  • Directs utility and prep staff in task assignments
  • Supports the team in all kitchen closing duties including clean-up and end of day kitchen inspection
  • Adheres to Zoo policies and protocols
  • Performs other duties as requested

Desired Training / Experience:

  • Culinary experience required, at least 2-3 years as a lead cook in menu execution
  • Must understand cooking terminology and ingredients.
  • Able to operate equipment used for food preparation
  • Must have current ServSafe certification

Skills / Knowledge Required:

  • Strong communication skills, must be adept at directing/instructing others
  • Demonstrates flexibility and self-motivation; Organizational skills.
  • Able to lift moderate to heavy items ( 50 – 100 pounds )
  • Shifts include days, nights, late nights and / or weekends.

Requires standing, walking and lifting heavy items

Working hazards include, but not limited to, hot surfaces, wet floors, hot grease and sharp objects
