Job Title:Sous chef

Main Purpose of the Job:To assist the Head Chef in the safe and efficient operation

of our catering outlets and to be responsible in his/her

absence

Salary Scale:£18,218.21 - £21,286.35

MAIN DUTIES

Café

1Ensure the highest quality of customer service at all times, both for clients and retail customers.

2Ensure that the kitchens consistently produce safe, high quality food with minimal wastage.

3Assist in creating outlet and event specific menus using locally sourced produce when available.

4Ensure pricing of products and services contribute to the profitability of outlets. Assist in ensuring stock management systems are in place and enacted.

5Assist in ensuring that food safety management systems are in place and enacted.

6To communicate effectively with front of house staff with regard to menu items, content of dishes, shortages, customer orders, special requests etc.

7To communicate effectively with customers maintaining a polite and helpful manner at all times.

8Assist in ensuring the staff structure andtimetable meet the needs of outstanding customer service.

9Assist in ensuring the condition and maintenance of premises and equipment are appropriate to service needs.

10Contribute to the development and promotion of the enterprise through active involvement in marketing and promotional efforts.

11Assist in providing structured training opportunities for people with learning disabilities to gain practical skills and accredited qualifications in catering that can be used to gain employment in the open market.

12Assist in providing opportunities for people with learning disabilities to participate in the development and running of the café

13Support people with learning disabilities to make full use of all the café facilities whatever their abilities embracing diversity and equal opportunities.

14Work with other agencies to promote the catering service’s facilities to the wider community.

15Actively contribute to the overall development of services and activities to ensure that all customers, visitors and students receive appropriate care and all individual needs are met.

16Undertake internal financial management as directed including till reconciliation and banking.

17Assist with the undertaking of regular Quality Audits and making timely and appropriate responses.

The catering service is continuously developing within West House and we encourage staff to work holistically across a service which is responsive to our customers care needs. Under these terms, you may be required to carry out any other duties reasonable requested by your manager.

Staff

1Assist in the setting of monthly rotas for the cafés and the completion ofall month end staffing returns, to include the active management of probationary periods, sickness, annual leave, time off in lieu and any other requirements directed by West House management.

2Supervise and appraise the junior staff working in the cafés and counsel as appropriate.

3 To be aware of the content of the supervisions of junior staff.

4To positively participate in team meetings.

General

1 To ensure high quality support is provided in line with West House standards and the Framework of Accomplishments and maintain West House philosophies, values and standards.

2To monitor and review effective systems of supervision and appraisal.

3To implement the policies and procedures of West House.

4To always act in a professional manner in accordance with West House policies and procedures.

5To observe the confidentiality of information relating to the people who use the service.

6To keep accurate records using specified systems and procedures.

7To represent West House at meetings/events as required.

8To co-operate in any investigation instigated by the management team of West House.

9To ensure one’s own professional development.

10Demonstrate loyalty and respect to West House and colleagues.

11To present a professional image in terms of dress and conduct.

12Respect the paramount right of people to be treated with respect at all times.

13To promptly report to the West House Management team any matters affecting the wellbeing of any individual using the service.
