Post Title: / Apprentice Chef

Purpose: / To assist the Chef Manager and Second Chef with the College’s catering operation.
Reporting To: / Chef Manager
Responsible For: / Assisting the Chef Manager and Second Chef in providing an outstanding catering service to Reigate College.
Main responsibilities
  • To assist the Chef Manager in preparing food in accordance with the daily menu and catering specification.
  • To assist the Chef Manager in ensuring that the food preparation process runs smoothly so that food is provided in sufficient quantity and time to satisfy the needs of customers.

Main/Core Duties
Leadership and Personal Behaviour /
  • To be a presence, both around the Kitchen and Refectorypromoting the College’s catering service.
  • To be professional, friendly and respectful towards all colleagues, and to address any concerns through the Chef Manager and established procedures.
  • To be professional, friendly, fair and firm with students, demonstrating the sort of politeness and respectfulness that we wish them to emulate, and to ensure that the catering staff adopt a similar approach.
  • To participate as a team member, demonstrating a positive attitude, particularly when faced with challenges or frustrations.
  • To maintain the highest standards of personal hygiene according to the College’s policy
  • To, at all times whilst on duty, wear the uniform supplied by the College.

Other Specific Duties
  • To attend college when required in order to complete the required course work.
  • To address the appraisal targets set by the Chef Manager each Autumn Term or more regularly, if necessary.
  • To continue personal development as agreed at appraisaland to note all details of training in relevant training record.
  • To comply with the Policiesand procedures produced by Reigate College.
  • To maintain a record of excellent attendance and punctuality.
  • To maintain a high standard of personal hygiene and appearance
  • To dress appropriately for work.
  • To carry out any reasonable duties assigned to you be the Chef Manager.

Knowledge / Essential
  • An excellent understanding of the nutritional value of food and special dietary arrangements
  • An excellent understanding of food hygiene and health and safety regulations in catering and hospitality
  • A good understanding of the workings and maintenance of catering equipment
  • An excellent understanding of catering in a competitive environment
  • Computer literacy with a working knowledge of Microsoft Office

Experience / Essential
  • A successful track record in the catering industry, preferably with experience of contract catering

Skills / Essential
  • Excellent culinary skills with a passion for food
  • Strong leadership skills with the ability to manage and motivate others
  • Ability to organise work processes to deliver on time and to agreed quality standards
  • Ability to adapt quickly and flexibly to new demands and change and to assist others to do so

Qualifications/ Training / Desirable
  • Level 3 catering qualification
  • Advanced Food Hygiene and Safety Certificate
  • First Aid Qualification
  • HACCP / Health and Safety certificate
