Grilled Fruit with Tangy Minted Yogurt Honey Sauce

Ingredients:

  • 12 oz nonfat plain yogurt
  • 3 tablespoon honey
  • 2 tablespoon fresh lime juice
  • 3 tablespoon finely chopped fresh mint
  • Fruit of choice (We use cantaloupe)

Instructions:

  1. Prepare grill for cooking
  2. Stir together yogurt, honey, lime juice, and mint in a small bowl and chill until ready to serve
  3. Thread about 4 pieces of fruit onto each skewer
  4. When fire is medium-hot (you can hold your hand 5 inches above rack for 3 to 4 seconds), grill fruit in batches on lightly oiled grill rack
  5. Turn once until browned and slightly softened, about 5 minutes total
  6. Serve fruit on skewers with sauce on the side

Ingredients:

  • 1 (16 oz) can black beans, drained
  • ½ bell pepper, cut into 2 inch pieces
  • ½ onion, cut into wedges
  • 3 cloves garlic, peeled
  • 1 egg
  • 1 tablespoons chili powder
  • 1 tablespoons cumin
  • ½ cup bread crumbs
  • ½ cup zucchini (shredded and drained)
  • ½ teaspoon kosher salt
  • Opt. 1 teaspoon Thai chili sauce or hot sauce
  • 6 Whole Wheat Buns (if desired)

Instructions:

  1. Preheat grill on high heat and lightly oil a sheet of aluminum foil ORPreheat oven to 375 degrees F, and lightly oil a baking sheet.
  2. In a medium bowl, mash black beans with afork until thick and pasty.
  3. In a food processor or blender, finely chop bell pepper, onion, and garlic. Then stir into mashed beans
  4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together.
  6. Drain mixture for about 30 minutes. Stir several times.
  7. Divide mixture into 6 patties.
  8. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

Stuffed Jalapeño Peppers

Ingredients:

  • 10-12 jalapeno peppers
  • ½ cup goat cheese
  • 2-3 tablespoon fresh parsley
  • 1 teaspoon of paprika

Instructions:

  1. Split jalapeños lengthwise and remove seeds, if desired.
  2. Stuff with goat, feta, or soft white cheese.
  3. Broil until skins start to blacken. Remove from heat.
  4. Garnish with paprika or parsley.

Sweet Veggie Smoothie

Ingredients:

  • 1 Cup apple juice
  • 1 Cup of sliced apple (sweet tastes better)
  • ¼ Cup applesauce
  • ½ Cup sliced carrots
  • ½ cup of cucumber
  • 2 cups of ice
  • Opt. dash of cinnamon or nutmeg

Instructions:

  1. Blend all ingredients until smooth.
  2. Adding the nutmeg and cinnamon will give it a great fragrance.
