Food Laboratory Rules and Expectations

The lab experience providesstudents with an opportunity for practical hands-on application related to the concepts and principles learned in the classroom. In order to have a safe and sanitary environment during labs, it is necessary that students follow the procedures below.

Signature of this document is required before participating in the labs to protect students, teachers, equipment, and facilities.

Expectations

  1. Students must complete classroom work in a timely fashion to participate in labs.
  2. Students must correctly complete market order and lab plans.
  3. Students must pass the safety and sanitation test with a C or better before participating in labs. Students will have the opportunity to re-take the quiz until they successfully pass. Students will be given alternative assignments for labs until they qualify.

Laboratory Rules

  1. Hair that is touching the eyebrow, comes forward on the face, or touches the ear must be pulled back or contained. Initial hair nets, bobby pins, or hair ties will be provided by the teacher. (Additional hair nets, etc may be purchased from teacher until supplies last).
  2. Aprons must be worn throughout the entire class time. Aprons will protect your personal clothing as well as dander.
  3. Students must maintain proper hygiene on labs days. This means clean clothing, proper shoes, and a clean self.
  4. Plastic gloves are available for when handling food and if hands have open cuts or sores.
  5. Food will not be misused in any way.
  6. Do NOT take extra food that has not been assigned to you (measure carefully and accurately).
  7. Do NOT take food that you did not request on your market order.
  8. Only order what the recipes call for. Additional ingredients will result in loss points.
  9. Do NOT throw food.
  10. Use the food in a way your teacher instructs.
  11. During buffet labs, students must portion recipe so each students receives an equal amount. Not pre-planning serving of food will result in loss of points.
  12. Do NOT sit on counters nor pull chairs into kitchen areas.
  13. No towel whipping or other horse play in the kitchens or classroom.
  14. Students must remain in their kitchens or at their assigned tables for the entire lab. Reasons a students may leave is limited to:
  15. Get towels, dishcloths, and aprons.
  16. Get supplies (one person from each kitchen only).
  17. Store food in refrigerator (with permission from teacher).
  18. Set table, eat meals, or clear table.
  19. Impending illness or injury.
  20. Do NOT go into teacher areas (such as storage areas or refrigerators) or supply cabinets without permission.
  21. No one may leave room during the period without receiving permission from the instructor.
  22. Dishes will be cleaned in the prescribed manner, using hot soapy water to wash dishes and then rinse them. Dishes will be dried thoroughly dried and stored in their assigned storage areas.
  23. Report any injury, kitchen damage, or messes to teacher IMMEDIATELY.

Clean Up

  1. Everything MUST be cleaned, dry and in specified places at the end of the period. DON’T leave the lab until the kitchen is checked by the teacher.
  2. Return all borrowed supplies or left over ingredients to the teacher.
  3. Dry out sink, clean sink drain, sweep the floor and complete lab duty.
  4. Everyone must share and rotate cleaning responsibilities.
  5. Sanitize desks.
  6. Always report any damaged equipment to teacher IMMEDIATELTY.

Discipline

Due to safety and sanitation concerns, these policies will be strictly enforced.

  1. Any of the following discipline procedures will result when expectations or rules are not met or followed depending on the situation.
  2. Conference between student and teacher. As needed administrator or parent may be require to attend as well.
  3. Removal from the lab with an alternative assignment.
  4. Phone call home to parent.
  5. Removal to office for remaining class period.
  6. AHS discipline policy will be enforced.
  7. The cost of repairs/replacement of any equipment that is intentionally damaged or misused will be paid for by the students(s) responsible.
  8. Alternative assignments for the lab experience will be given when market orders and lab plans are incomplete or incorrect.
  9. Common policy requires the use of hair nets, etc when preparing food for others. Failure to wear aprons and hair nets will result in loss of lab participation

Please note that teacherscan not call long distance from most phones at school. There are only a few phones that have that capability.

Sign and detach last page. Return to the teacher in order to participate in labs for class. The rest of this agreement should be kept in your binder to refer to during the course of the semester.

Lab Agreement

I have read the above classroom policies and procedures and understand the safety procedures that will be followed in food classes. I agree to abide by these policies and procedures and to follow the safety procedures in the laboratory for the duration of the class.
