Purpose / This theory-based entry-level unit standard is for people carrying out milk products processing in a dairy processing operation.
People credited with this unit standard are able to demonstrate knowledge of: the purposes of evaporation and spray drying, and common uses of the main classes of spray dried dairy products; the basic principles of the evaporation process; the basic principles of spray-drying; and the properties of spray dried dairy products, in a dairy processing operation.

Outcomes and evidence requirements
Outcome 1
Demonstrate knowledge of the purposes of evaporation and spray drying, and common uses of the main classes of spray dried dairy products in a dairy processing operation.
Evidence requirements
1.1Purposes of evaporation and spray drying are described in terms of preservation, reduction of volume, and tailoring for customer applications.
1.2The relationship between the main unit operations in the milk powder process is described in terms of the purpose of each stage.
Rangeoperations include but are not limited to – milk treatment, evaporation, spray drying.
1.3Common uses of the main classes of spray dried dairy products are described in terms of food ingredients and consumer applications.
Rangeuses include but are not limited to – skim milk powders, whole milk powders, whey protein concentrates, milk protein concentrates.
Outcome 2
Demonstrate knowledge of the basic principles of the evaporation process in a dairy processing operation.
Evidence requirements
2.1The main components of a falling film evaporator are described in terms of their functions.
Rangecomponents may include but are not limited to – preheating system, calandria, vapour recompression, separator vessels, condenser, vacuum systems;
evidence is required of two components.
2.2Main controls of an evaporator are described in terms of their primary functions.
Rangeevidence is required of at least two controls.

Demonstrate knowledge of the basic principles of spray-drying in a dairy processing operation.
Evidence requirements
3.1The main components of a spray drier are described in terms of their functions.
Rangecomponents may include but are not limited to – atomisers, primary drying chambers, secondary drying, powder and air separation;
evidence is required of two components.
3.2Main controls of a spray drier are described in terms of their primary functions.
Rangeevidence is required of at least two controls.
Outcome 4
Demonstrate knowledge of the properties of spray dried dairy products in a dairy processing operation.
Evidence requirements
4.1Spray dried dairy products are described in terms of product composition and physical characteristics.
4.2Spray dried products are described in terms of company food safety requirements.
