National Nutrition Month 2017

“Put Your Best Fork Forward”
National Nutrition Month® is a nutrition education and information campaign created annually in March by the Academy of Nutrition and Dietetics. The campaign focuses attention on the importance of making informed food choices and developing sound eating and physical activity habits.
The theme for 2017 is "Put Your Best Fork Forward,"which serves as a reminder that each one of us holds the tool to make healthier food choices. Making small changes during National Nutrition Month® and over time, helps improve health now and into the future.

Strawberry Kale Salad with Walnuts

Ingredient:

1 lb fresh Kale

½ cup Canola Oil

1 cup sliced Strawberries

¼ cup Walnuts

¼ cup Lemon Juice

2 Tbsp Honey

Salt & Pepper, to taste

Directions:

1.)Wash kale very well and dry. Remove midribs from kale. **If kale has thick ribs, cut them out by slicing along each side so that you’re only left with the tender leaf.

2.)Stack 3 or 4 leaves at a time and roll them up tightly lengthwise. Using a very sharp knife cut across the roll into very thin strips about 1/8th inch thick.

3.)Add ¼ cup of oil and massage kale for 2 minutes to break down the fibers.

4.)Add sliced strawberries and walnuts to kale

5.)In a small bowl, whisk together remaining oil, lemon juice, honey, salt & pepper.

6.)Add dressing to kale and strawberries and toss to evenly coat salad.

Marissa Thorsen, RD is a registered Dietitian for Sodexo School Services in your school district. She received her degree from Cedar Crest College and completed her internship with the College of Saint Elizabeth Internship program.

Marissa works with Sodexo management to ensure the cafeteria menus and snacks are compliant with the USDA’s Healthy Hunger Free Kids Act (HHFKA) regulations. She also provides school nurses, students and parents with carbohydrate counts for students with diabetes and researches food labels for students with food allergies or intolerances.

In addition, Marissa develops and presents interactive nutrition and physical activity presentations to students and the community. She is available to students, parents and school faculty for nutrition related concerns or questions.
