Operations:
1) Number of patrons inside and outside
Item 1. The dining room/inside bar/ covered patio has seating for 79 occupants as noted on the drawing. The outside open air patio has seating for 80. Additional standing room patrons outside, service staff, and/or, customers ordering food at the counter should be anticipated. I believe the total number of occupants will be 200. Since the building code doesn’t regulate outside spaces (only the inside of buildings) we do not have a firm # of occupants for the entire site.
2) Hours of operation inside and outside
Item 2- Depending on patio & sidewalk licensees of course, hoping to run11am - 1:30aminside 7 days a week and until permitted to outside in the warm weather months. Also planning for morning hours on the weekends to do breakfast/brunch. Toying with the idea of doing breakfast during weekdays also but maybe down the road, not as of now.
3) Will there be a delivery operation? If so, what will the logistics be?
4) How will they handle deliveries? What is the proposed truck route?
Items 3 & 4 . Deliveries are off the back service alley, and will not be off Damen or Rice. We show the service corridor on our floor plan.
5) What is the anticipated food/alcohol revenue breakdown?
Item 5- 50/50. We will be a food centricoperation as noted by the various menu items, ice creams, and milkshakes. We will also have an extensive children's menu. Giving the multitude of young families in the area a nearby option. Something we feel there aren't many of currently in the neighborhood.
6) Do they intend to have amplified music outside? Inside?
Item 6 - Yes. We will go over more in our meeting but we're planning on running a family friendly music format featuring Motown hits and classics. Background music levels at most. Nothing obnoxious or too loud.
7) How will they handle trash pick-up? Where will the refuse bins be located?
Item 7. – Trash is located on the drawing in the northwest corner of the alley, in a masonry enclosure/screen. Trash pickup will also be off the rear service alley with no trash pickup on Rice or Damen.
