WHAT DOES THE SUBJECT INCLUDE?

TheLevel 3 Advanced Technical Diploma in Professional Cookery (450) will help learners undertake advanced skills and techniques in producing dishes, enabling them to undertake roles within a kitchen, whether in kitchen & larder or the pastry section.

This course is suitable for those who love food and enjoy practical daily challenges in an exciting industry. This course is ideal for individuals who are positive, out-going and lively. The aim of the programme is to enable learners to attain the necessary skills to do well in this dynamic industry. Gastronomic Skills will be taught by practical lively demonstrations and hands-on experience which will allow learners the opportunity to practice the skills they have learnt.

WHAT IS THE STRUCTURE OF THE COURSE?

The programme is largely practical. Essential theory is generally taught using portfolios of evidence. You will study food preparation and cooking you will gain the advanced cookery skills required by all aspiring chefs. We will help you develop your research skills to help you gain a thorough understanding of the hospitality sector and enable you to make informed decisions about your future career.

IS THIS COURSE FOR ME?

Candidates require a genuine interest in food and customer care and the ability to succeed and have fun in a challenging environment. Acceptance to this programme will be by interview and the outcomes of initial guidance. Applications from enthusiastic and well-motivated students would be desirable. A Level 2 qualification in catering is a valuable preparation for this qualification.

WHAT ARE THE ENTRY REQUIREMENTS?

Entry is by formal interview, a grade 9-4 (A-C) in English and Maths is desirable.

You will have the opportunity to work and be assessed in the college restaurant, plus outside catering events and other real workplace environments. You will also be able to achieve a range of related catering awards including Food Safety and there will also be opportunities to participate in national cookery competitions.

This is a 1 year course.

WHAT DO I NEED TO BRING WITH ME?

You will need to buy one set of chefs’ whites, your own personal knife set and a text books. (You may be able to get help with the costs from the College’s Learner Support Fund. More details are available from the Student Services team)

HOW CAN I PREPARE MYSELF BEFORE THE COURSE BEGINS?

The diploma provides an excellent foundation for those wishing to progress into a catering role irrespective of ability, learners will likely commence as a commis chef, but be promoted once they have shown the skills they have gained while undertaking this qualification.
