Mead, or honey wine, is sweet, light and the oldest known alcoholic beverage in mankind. This chicken is packed with delicious flavor- slow cooked mushrooms, caramelized onions and a lovely sweet mead sauce that boasts of a time long, long ago. In Medieval days Monks produced mead from their monasteries and was enjoyed by Kings and Nobles.

Anyone who knows me, knows that I love history and learning about different cultures. Combining that with my love to cook and each meal is an adventure of flavors and discovery. This meal reminded me of being in Ireland- which, I STILL need to write about very soon. We have been back for only two weeks and we dearly miss that lovely lush green country filled with mystery, castles and so much beautiful and heartbreaking history.

Ireland captivated my heart and soul in a way no other country has. I’m excited to write down our adventures and discoveries there for you all to read soon. So stay tuned!!

Aside from Ireland, this chicken was seriously delicious. It was sweet, savory and elegant. Allowing it to cook in the oven for an hour really made the flavors come alive. As for the mead- I just have to praise my husband, Matt, for making this delicious mead from home! It took 6 months to brew, but it was well worth the wait. It was so good. We are currently brewing up a few more batches and I’ll have to share the recipe and process to homemade mead brewing in the near future. But don’t worry- you can buy mead if making it from home isn’t an option. You can find mead at any wine store or place with a decent wine selection like World Market.

And if you love learning about the Medieval times like I do, you’re going to love this dish. Of course, this meal would have been consumed by Kings and Nobles or others of wealthy disposition only, not ‘commoners’. How blessed we are in todays day and age that we can eat of things which only Kings had the means to eat!

Ingredients

  • 4 skinless chicken thighs
  • 1 teaspoon parsley
  • 2 teaspoons garlic powder
  • salt & pepper to taste
  • 1 tablespoon olive oil
  • 3 tablespoons Butter
  • 1/2 Onion diced
  • 8 oz mushrooms sliced
  • 5 oz mead honey wine
  • 1 teaspoon fresh squeezed lemon juice

Instructions

  1. Season the chicken thighs with salt, pepper, a few dashes of dried parsley and garlic powder. Heat the olive oil and two tablespoons of butter in a large skillet over medium high heat. Brown the chicken on each side, about 2 minutes per side. Set aside in a 9x9 greased casserole dish. Preheat oven to 375. In the same pan, add the diced onion. Cook until soft and brown, about 5 minutes. Add the mushrooms. Continue to sauté the onion/mushroom mixture until the mushrooms are browned, about 8 minutes. Season with salt, pepper, 2 teaspoons of garlic powder and parsley. Next, add the remaining tablespoon of butter, lemon juice and honey wine. Bring to a boil. Turn down to a simmer and cook stirring frequently for 3 minutes. Pour sauce over chicken and cook for 50 minutes.

Recipe Notes

*If you would like the sauce a little thicker, dissolve 2 teaspoons of cornstarch in 2 tablespoons chicken stock or water and add to the sauce with the honey wine. Simmer for 3 minutes.
