I have always like baking as well as art, therefore I chose to be a part of the Baking & Pastry Arts Program at TCHS Brandywine. The program combines my two passions. I entered the program in the fall of 2016 and will complete my time at TCHS in June 2018. I currently work as a baking assistant at a local and I would like to work in the field after graduation as bread bakers, pastry assistants or cake decorators. Some of the skills I;ve learned are:

•Yeast-raised breads and rolls

•Quick breads and cakes

•Cookies

•Custards, creams, mousses and soufflés

•Icings, glazes and sauces

•Frozen desserts

•Pies, tarts and fruit desserts

•Filled and assembled cakes and tortes

•Individual pastries

•Chocolates and confections

•Wedding and specialty cakes

A baking & pastry chef can be self-taught and hired with just experience. Most high-end chefs go to culinary school for two (2) to four (4) years. Post-secondary schooling allows for more experience and exposure to all aspects of the business. Some schools are: Culinary Institute of America (CIA), Johnson & Wales, The Restaurant School and The Art Institute. Going to an institution also educated students in other parts of the business, such as management.

Action Plan

SOAR stands for Students Occupationally and Academically Ready. In order to qualify for SOAR program postsecondary credits a student must:

·  Earn a high school diploma, with a minimum 2.5 GPA on a 4.0 scale in the technical core courses

·  Complete the secondary school component of the approved PDE Program of Study

·  Achieve proficiency on all tasks of the approved PDE Program of Study Competency Task List

·  Achieve competent or advanced level on the secondary school end-of-program assessment that is appropriate for the approved PDE Program of Study

The Restaurant School at Walnut Hill

The baking and pastry industry has been growing rapidly. Artisan breads, specialty baked goods, chocolates, confections and celebratory cakes are all staples at special functions, and demand is rising for culinary artists who can provide these high-quality goods. I am detailed-oriented, creative and possess a passion for sweets, therefore I joined the Baking & Pastry Arts program at TCHS. I learned the knowledge and skills that have helped me on my path to becoming an accomplished professional in the baking and pastry arts.

Through my experience of three years in the program, as well as guest speakers and college visits, I have decided to apply to culinary school. I was accepted into The Restaurant School, located in Philadelphia, Pa. The program is three years in length. In addition to my baking & pastry studies, I will minor in hotel/restaurant management and will have the opportunity to go on a Cruise or to France. As a cherry on top of my sundae- I have earned 8 college credits while at TCHS.
