Name ______Carbohydrates:

Period _____ Table _____ Score _____/23 (1/2 point each)

Here’s what you need to know about carbohydrates:

Carbohydrates come from plants. (A few are found in milk.)

Carbohydrates break down into glucose to provide energy. They are your main energy source.

Sugars are simple carbohydrates. Their glucose enters the bloodstream quickly (maybe too

quickly). Sugars occur naturally infruits, some vegetables, and juices Sugars are concentrated in honey, sugars, syrups, and any ingredient that ends in “-ose”

Starches are complex carbohydrates. Their large molecules take longer to break into glucose, so

they provide a more even supply of energy. That’s good news. Starches are found in grains, starchy vegetables, and beans

Refined carbohydrates like table sugar or white flour do not provide the vitamins, minerals and

fiber you are more likely to find in unprocessed carbohydrates.

The Dietary Guidelines for Americans recommend that you:

• Choose fiber-richfruits, vegetables, and whole grainsoften. (Juices and refined products

won’t provide fiber.)

• Choose and prepare foods and beverages with littleadded sugars or caloric sweeteners.

• Reduce the incidence of dental caries(cavities) by practicinggood oral hygiene and

consuming sugar andstarchcontainingfoods and beverages less frequently.

Now, use your information to make some choices about carbohydrates.

  1. Underline the foods that will provide carbohydrates: (7)
  1. On the lines you drew, write S if the food provides Simple carbohydrates, or C for Complex carbs.
  1. Circle the carbohydrates that will provide fiber. (4)
  1. Cross out the foods that contain lots of added sugars. (2. 3if juice has lots of added sugars)
  2. On these ingredient lists, underline the ingredients that are sugars: (The number tells how many you will find.)

Candy bar: (3) milk chocolate (sugar, cocoa butter, chocolate, skim milk, lactose) peanuts,

corn syrup, egg whites

Graham Crackers: (4—count molasses) Enriched wheat flour, sugar, graham flour, vegetable

oil, high fructose corn syrup, honey, molasses, salt, vanilla

Gatorade Powdered Drink Mix: (2) sucrose, glucose, citric acid, salt, sodium citrate….

Marshmallows: (3) corn syrup, sugar, dextrose, modified corn starch, water, gelatin…

Is it good news or bad news to see sugar as the first ingredient? ______
