Scrambled Eggs on Toast

Ingredients (Per Pair)

3 eggs

2 Tbs tasty cheese

Parsley, chopped

2 slices bread

½ Tbs margarine for frying

Method

1. Crack eggs into a mixing bowl. Whisk eggs with a fork or a balloon whisk until frothy.

2. Add cheese and chopped parsley. Stir to combine.

3. Melt margarine in a frying pan over medium heat. Pour egg mixture into pan. As eggs begin to set, gently pull the eggs across the pan with a wooden spoon, forming large soft curds.

4. Continue cooking – pulling, lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly.

5. Meanwhile, grill 2 slices of bread until brown.

6. Serve scramble eggs on toast. Garnish with parsley.
