TUESDAY:

· Bison tacos, cilantro-lime sauce, salad fixings, guacamole, chips, fruit, leftover rice and peas

Do this on Sunday, Monday or anytime you have about 10 minutes before Tuesday dinner:

· Make cilantro-lime sauce: in mini food processor, process 1 cup thick Greek yogurt, ½ c Hellmann’s mayonnaise, 1 cup cilantro leaves, juice of 1 lime, pinch of salt. Store covered in refrigerator; lasts 4-5 days.

You could do this in the morning or afternoon before dinner:

· Measure seasonings: 1/2 tsp garlic powder, ½ tsp onion powder, ¼ tsp smoked paprika, 1 tsp coconut sugar, ½ tsp salt

· Cook meat: place ground bison in large skillet; add seasoning (½ tsp garlic powder, ½ tsp onion powder, ¼ tsp smoked paprika, 1 tsp coconut sugar, ½ tsp salt; cook beef, chopping into small pieces and tossing with a spatula, until brown and cooked through. Remove from heat and save for tacos.

· Prep toppings: Wash and chop lettuce (iceberg or romaine) and tomatoes for toppings.

About 30 minutes before dinner, plan to do these things:

· Take out prepared guacamole or make homemade guacamole (avocados, lime, salt; mash in a bowl and serve).

· Heat up rice and peas (leftover from Monday) in one pot.

· Take out cilantro-lime sauce (from Sunday).

· Heat up tortillas in oil / microwave.

· Make tacos: Heat up avocado oil over medium high heat in a small sauté pan, about 1/3 full. When oil is hot but not smoking, dip corn tortilla in hot oil for 3 seconds or so (the oil should bubble a bit as it fries the tortilla), flip the tortilla and let cook for 3 more seconds. Remove tortilla from oil and place on a paper-towel-lined plate (tortilla and oil will be very hot!). Let cool for a few minutes. Add taco filling and roll up in a taco! Serve warm.

Serve bison (or cheese or other filling) tacos with guacamole, lettuce and tomatoes, cilantro-lime sauce, chips, rice and peas, and fruit.

Lower Carb Version: Bison can also be served on a salad as a taco salad with cilantro lime sauce as the dressing.

Picky Kid Version: Make cheese tacos or quesadillas for the kids.

Ideas for Other Fillings: sautéed spinach, mushroom and cheese; chicken tinga (on my website); grilled fish; ground beef; ground turkey; frozen hash brown potatoes and cheese
