Banana bread
Sift together2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
Blend in a separate bowl
2 mashed bananas (use a fork)
2 eggs
1 cup sugar
1 melted stick of butter or margarine
½ tsp cinnamon
1 tsp vanilla extract
Sift the first 4 ingredients together. In a separate bowl blend the last 6 ingredients.
Mix dry ingredients into the wet ingredients and add 1 cup of chopped nuts if desired. Bake in grease loaf pan for 1 hour at 350°.
Banana Bread 2
½ cup shortening or margarine1 cup sugar
3 eggs
3 or more bananas
2 cups flour
1 tsp soda dissolved in a little cold water
¼ cup nuts if desired
Mix in order given and bake in moderate oven for 40 minutes
Bermuda Johnny Bread
¼ cup sugar1 egg
¼ tsp salt
1½ cups flour
½ cup milk
butter the size of an egg
2 tsp baking powder
Mix dry ingredients, and then add beaten eggs and milk. Roll out on pastry board and bake on griddle iron, until slightly brown.
Bunratty Park Scones
Must use butter Variation add 2 teaspoons mixed spice and replace the raisins with 1/3 cup raisins and 1/3 cup mixed candied peel.
4 cups all-purpose flour2 tsp baking powder
pinch of salt
¼ cup sugar
4 tbs. cold butter
¾ cup raisins
2 cups buttermilk
2 eggs beaten
¼ cup heavy whipping cream
butter and jam for serving
lightly whipped cream for serving
Preheat the oven to 400° lightly grease a baking sheet.
In a large bowl, combine the flour, baking powder, salt, baking soda, and sugar. With a pastry blender, 2 knives, or your fingers, cut or work the butter into the flour mixture until it resembles coarse crumbs. Add the raisins.
Gradually stir in the eggs and buttermilk and mix until a soft dough forms. Turn the dough onto a lightly floured surface and roll into a 1 inch thick round. With a 2 inch biscuit cutter cut the scones into rounds and place on the prepared pan. Brush the tops with the cream.
Bake until golden brown, about 20 minutes. Serve warm, with butter, jam, and whipped cream if you like.
Corny Cornbread
Frozen creamed corn is sold in the frozen vegetables section of most grocery stores. It is much better than using canned corn.
½ cup vegetable oil, plus ¼ for greasing pancakes1 cup self-rising corneal
¾ cup self-rising flour
1 cup cream-style corn.
2 eggs
1 cup sour cream
1 cup grated sharp cheddar cheese, optional
½ tsp cayenne pepper, optional

Preheat oven to 375°. Generously season a cast iron skillet with up to ¼ cup vegetable oil. Preheat the pan either in the oven or on the stove over medium-high heat.
Mix all ingredients together in a large bowl, stirring with a wooden spoon or rubber spatula until combined. Pour batter into the preheated cast iron skillet. Place skillet in the oven and bake until golden brown, approximately 30 minutes. If making individual size cornbreads in smaller pans, they will require a shorter cooking time.
Serves 8
Currant Scones
Soak Currants and or Golden Raisins in rum or Brandy ahead of time, over night at least.
5 cups whole wheat flour, sifted¾ cup sugar
1 tb. baking powder
1 tsp baking soda
1 lb butter
1 cup heavy cream
1 tsp vanilla
liquor soaked raisins or currants handful or more
Combine dry ingredients. Cut in butter. Mix in fruit to coat with flour (helps prevent shrinkage). Mix vanilla with cream. Add to mix. Combine then lay out on table and fold like a pie crust. Roll out, cut, and brush with cream.
Bake at 375° till golden brown. About 12 minutes convection, 20 minutes in regular oven.
Date Nut Bread
2 cups sugar2 eggs
4½ cups flour tortillas
½ tsp baking soda
4 tsp baking soda
2 tbs. shortening
½ tsp salt
4 cups boiling water
2 cups chopped dates
2 cups chopped nuts
2 tsp vanilla
Pour 4 cups boiling water over dates and boil for 3 minutes. Cream shortening, sugar and eggs together, sift dry ingredients. Add nuts to flour mixture. Alternate date mix with dry mix, add vanilla. Grease and flour pans
Bake @ 275 for 1 hour 3 pans of bread
Gingerbread
¼ cup butter½ cup molasses
1 egg
1 dessert spoon of ginger
pinch of salt
½ cup sugar
1 tsp soda
1½ cups flour
Put baking soda in the molasses, beat until it foams. Sift ginger into flour. (Excellent with raisins). Mix the rest well. Put into cold oven and bake for ½ to ¾ hour in moderate oven.
Irish Soda Bread
2 1/4 cups all purpose or unbleached flour2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/4 cup margarine or butter
1/2 cup raisins
2 teaspoons caraway seed, if desired
1 cup buttermilk
1 tablespoon margarine or melted butter
Heat oven to 375°F. Grease 8 inch round cake pan. Lightly spoon flour into measuring cup: level off. In large bowl, combine flour, sugar, baking powder, soda and salt; blend well. Using pastry blender or fork, cut in 1/4 cup margarine until mixture is crumbly. Stir in raisins and if desired caraway seed, add milk all at once; blend well. On well-floured surface, knead dough gently until no longer sticky, about 5 or 6 times. Press dough in prepared pan. With sharp knife, cute an "X" 1/4 -inch deep on top of the loaf. Brush with melted margarine. Bake at 375° F for 25 to 35 minutes or until golden brown. Remove from the pan immediately; cool competently.
1(24- oz.) loaf
Cooking Tips
To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make 1 cup.
Lemon Tea Bread
Clark Point Inn
¾ cup margarine (1 1/2 sticks)2 cups sugar
grated rind of 2 lemons
4 eggs
3 cups all purpose flour
2 tsp baking powder
½ tsp salt
1 cup milk
2 juice of lemons
½ cup sugar
Cream margarine and 2 cups of sugar with lemon rind. Add eggs, beat well.
Add dry ingredients alternating with milk, add 1 tbs. of lemon juice into batter.
Bake in greased loaf pans at 350° for 1 hour.
Mix 1/2 cup sugar and juice, pour over bread while hot. Cool completely on rack.
Makes 2 loaves.
Mashed Potato Rolls
These are my son's and my granddaughter's favorite rolls.
1 pkg. yeast¼ cup potato water
½ cup mashed potatoes
¼ cup shortening
1 cup scalded milk
1 egg
4-4½ cups flour tortillas
Boil 2-3 medium potatoes. Drain reserving ¼ cup water and mash. Mix together 3 cups flour, sugar, salt, yeast to scalded milk add the shortening and reserved water. When cooled down slightly add to flour mixture with the egg. Add additional flour until soft dough is formed.
Place in greased bowl to rise. Punch down divide in half. Make 12 rolls with each half.
Place on baking sheet and let rise again. Bake 10-12 minutes
Strawberry Bread
1 1/2 cups fresh strawberries , sliced (about) 1 pint1 cup granulated sugar, divided
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
2 eggs
1/2 tsp vanilla extract
1/2 cup melted butter (1stick)
Preheat oven to 350°. Lightly grease and flour a standard glass ( 8 inch) loaf pan. Rinse, core and slice strawberries, place in a small bowl and sprinkle with 1/2 cup of sugar.
In a large mixing bow, blend together the remaining sugar, flour, baking powder, baking soda, salt and cinnamon.
In a medium bowl beat thee until foamy, then add vanilla extract and melted butter. Make sure the melted butter isn't too hot just barley melted. Stir in the strawberries.
Combing the 2 mixtures, blending until the dry ingredients are moistened. Scrape the batter into the pan and bake for 60-70 minutes.
Remove from oven and cool on wire rack for 20 minutes before removing the bread from the pan
Ulster Farmhouse Scones
Lightly whipped cream for serving (optional) must use butter.
2 cups all-purpose flour3 tsp baking powder
1 tsp salt
4 tbs. cold butter
½ cup mashed potatoes
1 golden delicious apple peel, cored, and grated lemon peel
1 tbs. sugar
¼ cup milk
1 beaten egg
butter and apple jelly for serving
In a large bowl, sift flour, baking powder, and sift together. With a pastry blender, 2 knives, or you fingers, cut or work the butter into the flour mixture until it resembles coarse crumbs. Add the mashed potatoes to the flour. Stir in the apple, sugar, and milk and mix well until a soft dough is formed.
Turn the dough onto a lightly floured board and roll out into 1 inch thick round. With a 2 inch biscuit cutter, cut the scones into rounds and place on the prepared baking sheet. Brush the tops with the beaten egg.
Bake until golden brown, about 15 minutes. Serve warm, with butter, apple jelly, and lightly whipped cream if you like.
Zucchini Bread
3 eggs1 cup salad oil
2 cups brown sugar packed
2 cups grated raw un pealed zucchinis
3 cups all purpose flour tortillas
1 tsp salt
1 tsp baking soda
1 tbs. vanilla
1 cup chopped nuts, raisins, etc.
Beat eggs. Add oil, sugar and zucchini mix well. Stir in flour and salt, baking soda. Fold in vanilla and nuts. Pour into 2 greased and floured loaf pans. (9 x 5 x 3 in).
Bake at 350° for 1 hour. Remove from pans and cool on rack. Makes 2 loaves.
