Purpose / This unit standard is for experienced people who are employed in the rendering department in a meat processing operation.
People credited with this unit standard are able to demonstrate knowledge of:the process of separation; the process of milling; andthe types of separation equipment used during rendering operations.

Outcome 1

Demonstrate knowledge of the process of separation during rendering operations.

Evidence requirements

1.1The process of separating fat and protein solids from cooked rendered materials is explained in terms of organisational requirements.

Rangeprocess includes but is not limited to – edible by-products, inedible by-products, species separation.

1.2The process flow of separated products to storage is described in terms of organisational requirements.

Rangestorage may include but is not limited to – protein meal storage hopper, animal fat storage tank.

1.3The removal of waste products from the separation process is outlined in terms of organisational and statutoryrequirements.

Rangewaste products may include but are not limited to – inedible rendering, wastewater treatment.

Outcome 2

Demonstrate knowledge of the process of milling during rendering operations.

Evidence requirements

2.1The milling process is explained in terms of reducing particle size and removing foreign matter.

Rangeprocess includes but is not limited to – edible by-products, inedible by-products.

2.2The process flow of milled products to storage is described in terms of organisational requirements.

Rangestorage may include but is not limited to – protein meal storage hopper, animal fat storage tank.

2.3The removal of foreign material from the milling process is outlined in terms of organisational and statutory requirements.

Demonstrate knowledge of the types of separation equipment used during rendering operations.

3.1Types of equipment used in the separation process are described in terms of their use.

Rangeequipment includes but is not limited to – centrifuge, percolator drain pan, screw press, drainer, grinder, screen, filter.
