Please give a detailed description of your project starting with its concise Aim.
The aim of this project is to raise awareness of the hospitality industry in Monmouthshire by integrating language learning and knowledge of culture and cuisine at the same time as catering skills.
2b / Please describe the objectives, benefits and priorities of your project
The objectives, priorities and benefits of the project will be:
1. Improved knowledge of, and employability, of participants in the tourism and hospitality sector in the Vale of Usk.
2. Improved language skills and understanding of their employment value
3. Increased use of local produce and observing seasonality.
WJEC state there are currently no appropriate externally assessed language qualifications for a project such as this. However there may be opportunities in the future and we would expect this project to highlight needs for assessment opportunities in a range of vocational areas (in this case catering).
The Border Marches network of the Association for Language Learning is a group of language professionals in Wales which supports language learning. Teachers in rural areas find it difficult to get access for professional development days or education access to after school support. We provide the sessions for a nominal fee, our most recent session was on
“Spontaneous speaking “which support the new GCSE curriculum.
The aim of this project is to teach language skills and knowledge of another cuisine and culture at the same time as catering skills.
We would like to pilot this project using the Italian language but it can equally be delivered in other languages as appropriate. The learning will be linked to cookery sessions and will encompass Italian cuisine.
The project is a partnership (Pilot) with the Modern Foreign Languages Department of Monmouth Comprehensive School (MCS) and the Network. The linked cookery sessions will be led by Franco Tarucshio OBE, Michelin Starred Chef, with an emphasis on seasonality, using local produce and an introduction to the culture of the country. The pilot will involve Year 8 at MCS. This is the year before GCSE choices are made and will mean that pupils have an idea of what is needed for a career in the tourism and hospitality industry in the Vale of Usk. The skills gained will also add value to the pupils' curriculum, in particular the Welsh Baccalaureate (BACC).
There will be three phases:
  1. 4 hours of language learning as part of the extra curricular provision at MSC. Health and safety induction.
The language lessons will include vocabulary related to the cookery sessions, for example ingredients, equipment – and recipes.
4 x 2 hour sessions in the School kitchens led by Franco Taruschio, (Italian Michelin starred chef) when the students will learn how to cook various Italian dishes, using local produce. Italian will be the main language of communication during these sessions. Language teachers will be in the kitchen for these sessions to provide linguistic support to the participants. All activity will be mapped to the Welsh.
The kitchen session will be observed (where appropriate) to media studies students who may be called upon to film the activity.
  1. Digital skills – A project website will be developed which will allow for replication of the process and activity to be shared widely. Media studies students will help in the development. A DVD will also be produced for distribution to other schools and interested parties.
  1. A practical event will close the project and will showcase the skills (culinary, linguistic and digital) and lessons learned by the participants.

Anecdotal evidence which highlights the lack of catering skills to meet demand in the Vale of Usk. However, the evidence base is across the sector and highlighted in the following reports/strategies;
Welsh Government Global Futures Programme highlights the lack of language skills in Wales. This is causing concern across the sector.
Futures Generation Act
September 2015. Meeting held in Monmouth to present Cucina d'Inferno, a similar concept carried out in 2010.
November 2016. Open presentation open the schools participating in the Border Marches Language Network to discuss possible future project. This was held at Monmouth Comprehensive and included representatives from schools from Abersychan, Newport, Abergavenny and others.

This project builds on Cucina d'Inferno, a project held at the Royal Forest of
Dean college, Gloucestershire in 2010. This project won a European Language
Label award and the Mary Glasgow prize for Curriculum Innovation in 2011.
It was repeated in 2012 as Cucina2. Both projects were successful with attracting boys, a group often difficult to interest in cookery and language learning.
This builds on the above project, linking to the Welsh Government's Global Futures programme to encourage language learning and to the delivery of the BACC.

2f / Describe how the project is innovative (see guidance for definition) and has a similar project been successfully undertaken in any other area (details, if possible)?
Whilst building on the above noted initiative this project has never been attempted in the Vale of Usk area. It is offering links directly to the BACC and the Global Futures strategy .
It builds on language learning and whilst this is in Italian it can be used for any language including Welsh. This offers major opportunities for development of tools and structure for a small cost.

3a / What do you hope to achieve with this project and explain when you think the key steps will be achieved?
Working with the MCS to build the pilot and tools for the project. The project will
  1. Increase the culinary and language skills of young people to prepare them for work in these sectors.
  2. Offer opportunities for greater vocabulary in a foreign language and offering practical application and additional activity outside the school mainstream education.
  3. Raise awareness of the job opportunities in the hospitality and tourism sector in the Vale of Usk LAG region

This is a pilot project and can only enhance learning skills.

The project can be stand alone … it fits alongside curriculum activity and therefore there is additional support and value for future use.

MCS falls within the statutory services of Monmouthshire County Council and as such does not have a constitution

Section 4: Long term impact of your project

4a / What do you expect to be the next steps for this project, and how will the project be sustained following this funding? (We may be able to help you find capital funding)
The project is very easily replicable, as all project tools developed during the pilot will be available for future use.
Food will be sourced from local hubs, growers and community groups, other costs will be low and make the project easily affordable. Again, this will be easily replicable in other areas and is integral to the project.
We anticipate that other schools in the Border Marches Network may undertake the project in academic year 2018/2019.

Articles in local papers, items on local radio and television
Articles in MCS news-sheets and presentations to School Governors and school PTA
The final phase of the project will involve the distribution of the DVD, or other media outlets. Uploading recipes used and presentations to interested parties will be part of the programme for the students.
The final celebration event for participants and future projects will also increase awareness of the project.
The language of delivery is English but can be promoted for use in the Welsh Language and delivered in other languages.
The tools can be adapted for use in any Language and therefore used to advertise and promote the project.
