INGREDIENTS

· 2 lbs. chicken breast, cooked and cubed

· 1 green apple, chopped

· 1 cup seedless red grapes, cut in half

· 1/2 cup slivered almonds (optional)

· 1/4 cup honey mustard salad dressing (recipe below)

· 8 cups of shredded romaine lettuce (or green of choice)

HONEY MUSTARD SALAD DRESSING (makes 1 cup)

· 1/2 cup reduced fat (2%) plain greek yogurt

· 3 Tbsp. Dijon mustard

Served with strawberry, lime and mint infused water


· 3 Tbsp. honey

· 3 Tbsp. rice vinegar

· 1 tablespoon fresh basil, chopped

· 1/4 cup extra-virgin olive oil

DIRECTIONS:

1. Combine the yogurt, mustard, honey, vinegar, basil and salt in a medium bowl and whisk until combined

2. Slowly add in the oil, whisking until well blended, set aside

3. In a large bowl, combine the chicken, apples, grapes, almonds (optional), and 1/4 cup honey mustard salad dressing.

4. Serve the chicken salad mixture over romaine lettuce

Yield: 5 Servings (1 cup chicken salad over 2 cups romaine lettuce)
