WHO’LL BE THE 2014 PASTRY QUEEN?
At SIGEP the second edition of the world competition dedicated to lady pastry chefs worldwide
Rimini, 4th December 2013 – After the first edition’s resounding success, The Pastry Queen, the world pastry championship reserved for ladies, based on an idea by Roberto Rinaldini, is returning to SIGEP. Contestants will be the eleven best lady pastry chefs from five continents. The panel of judges will be formed by the 11 trainers, chaired by Sonia Balacchi, winner of the title in 2011. Honorary Chairman will be Master pastry chef Iginio Massari, while the Chairman of the International panel of judges will be Frédéric Cassel (president, Relais Dessert). The awards ceremony will be on Monday 20th January.
The contest’s theme is The Evolution of cinema and must be illustrated by means of an artistic work in sugar and pastilliage, trying to also harmonize with the products required, i.e.: cake, cream dessert and plated dessert.
Pastry chefs have entered from the United States (Cher Harris), Brazil (Samara Trevisan Coelho), Belarus (Natallia Sharai), Mexico (Rosalba Rivera Ramirez), Japan (Futakami Tomomi), Switzerland (Irene Falcione), France (Laëtitia Moreau), Colombia (Astrid Morales Neira), Russia (Tatyana Beloborodova), Croatia (Ana Barišić) and Morocco (Hilal Rachida).
The competition will be held in the Pastry Arena and the Chocolate Hall from Saturday 18th to Monday 20th January. The first day will be dedicated to the out of competition test “Caffè Espresso & Dolce Tiramisù” in the Chocolate Hall, along with a barista. On the second day, there will be the first competition test in the Chocolate Hall: Cream Dessert.
The third day there will be the last tests and the award ceremony in the Pastry Arena. The tests will regard the realization of a cake, a plated dessert and a sugar sculpture.
As well as the official ranking, international press awards are foreseen for the best cream dessert, the best innovative plated dessert, the best cake, the best sugar and pastilliage cake-stand, the best technical work and cleanliness.
The great Master Pastry Chef Iginio Massari comments, “Events or competitions like this contribute to creating interest around the profession and promoting not only individuals but also raw material and technology companies.” Then Massari goes into more specific detail: “In the last five years, there has been a great revolution in the ladies’ world that has approached pastry making, a situation already existing abroad, but lacking in Italy. So much so that training schools classes are currently half men and half women and at training level Italy is equal to Austria, which is a model in the sector. Television has contributed a great deal to attracting ladies to the confectionery world. The best lady pastry chefs come in particular from training schools like those in Switzerland, France and Austria, but the Americans are also very motivated. I took a trip round China and saw that 20% of the confectionery structures are run by ladies.” And on Italian-made pastry, he says, “We Italians are strong on ingenious simplicity. Banality must not be confused with simplicity. It means that we are good at making a ‘single-flavour’ item that requires painstaking precision on behalf of whoever makes it.
Single-flavour pastry products are, for example, panettone, millefoglie puff pastry and cream layered cake, cannolo with cassata or ricotta…”
