USDA Foods-Cheese Processing Item Specifications

GENERAL SPECIFICATIONS:

Additives: The School District prohibits the addition of: monosodium glutamate, sodium nitrate, nitrates and nitrites, hydrolyzed vegetable protein, hydrolyzed plant protein, artificial coloring, artificial flavoring, artificial sweeteners, sugar free sweeteners, high fructose corn syrup, azodicarbonamide (ADA), butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT) in all foods. Beef products should be free of lean finely textured beef.

Prohibited Ingredients:Items may not contain imitation cheese, peanuts, pork products, gelatin (unless kosher or vegan), bleached flour, starch non-enriched flour, and bromated flour.

  • Minimum portion weight of five (5.0) ounces.
  • Crust shall be concave and have a three-quarter (3/4) inch raised lip and be of a layered flaky raised croissant style quality.
  • 100% cheese is to be pre-melted, low moisture, part skim, Mozzarella and/or blend of Cheddar and Mozzarella. NO IMITATION CHEESE IS ALLOWED.
  • CN Labeled – provides:

  • Primary source of flour is to be whole wheat.

Pizza, Fresh Baked, Round, 16 inch, Whole Wheat /
  • Minimum portion weight of five (5.0) ounces.
  • Each sixteen (16) inch pie to be pre-baked, pre-cut into eight (8) slices.
  • Crust to be rounded and have a raised edge.
  • Minimum ten (10) pies per case.
  • 100% cheese is to be pre-melted, low moisture, part skim, Mozzarella and/or blend of Cheddar and Mozzarella. NO IMITATION CHEESE IS ALLOWED.
  • CN Labeled – provides:

  • Primary source of flour is to be whole wheat.

French Bread Pizza with Cheese, Whole Wheat /
  • Each pizza slice a minimum of 4.5 ounces
  • Minimum acceptable portion size no less than eighteen square inches.
  • Crust to be French bread style consistency with flat bottom.
  • 100% cheese is to be pre-melted, low moisture, part skim, Mozzarella and/or blend of Cheddar and Mozzarella. NO IMITATION CHEESE IS ALLOWED.
  • CN Labeled – provides:

  • Each pizza slice a minimum of five (5) ounces.
  • Portion is to be no larger than 4 x 6. Crust to be rounded and have a raised edge.
  • NO IMITATION CHEESE IS ALLOWED. 100% cheese is to be pre-melted, low moisture, part skim, Mozzarella and/or blend of Cheddar and Mozzarella.
