Jewish Care at Ralli Hall, 81 Denmark Villas, Hove, BN3 3TH

I write with reference to my previous letter to you dated 20 March 2014, my revisit to the above on 29 April 2014, and an email that I sent to on 9 May 2014.

When I revisited Ralli Hall, I was pleased to see that deep cleaning, repairs and redecoration had been carried out during Passover. With regard to cleaning in future, I understand from that this is the responsibility of your organisation, even though the kitchen is used sporadically by other people at other times during the year. However, there were still no food safety records or documented procedures on site when I revisited to show what checks your staff carry out on the food served there.

I understand from that it is not possible for a copy of your full Food Safety Manual to be kept on site at Ralli Hall. However, I think that a written summary of the processes and food safety controls that take place there should be available, along with up to date records of checks made on food (eg core cooking/reheating temperatures). I appreciate that you don’t have access to a secure cupboard in which to store lots of records at Ralli Hall but suggest that it wouldn’t be difficult to accommodate a file for a month’s worth of Tuesday/Thursday records and a copy of the summary food safety policy/procedures. Older copies of records could then be kept back at the production kitchen. Alternatively, the policy and record sheet for that day’s service could be kept in a plastic sleeve attached to one of the insulated food boxes. The documents can then be returned to Hyman Fine House with the empty food boxes/trays at the end of service.

It is a legal requirement for some documentation to be available on site because even though service does not take place at Ralli Hall every day, meals are being served to a large number of potentially vulnerable people and there should be records there to prove that it has been done safely.

Registration Form

I note that we have still not received a completed Food Registration Form for the service of food at Ralli Hall and so ask that you fill out the enclosed form and send it to me by return of post. Alternatively, you can register online at www.brighton-hove.gov.uk/foodsafety

Once the necessary food safety documentation is in place at Ralli Hall, you can request a re-inspection and a rescore under the Food Hygiene Rating Schemeif you wish. I enclose a request form for you to complete or you can email me with details of what action you have taken to address the matters highlighted on my inspection of 11 March 2014.
