Week one:

The first thing we did was colour the Indonesian flag. I couldn’t get my hands on a copy of a colouring page for the Bali flag and the small details would have been difficult for them being so young, so we expanded our boarders a bit.

For this flag, the top half is RED and the bottom half is WHITE.
The red on the flag represents blood (the human body), courage and sacrifice.
The white represents the soul (afterlife), peace and purity
Together they encompass the human experience.

Week One Recipe:

Thai Satay with Rice

Ingredients:

1.5C white rice
1/2C + 1 tbsp reduced sodium soya sauce
1/8C + 1/4C +1tsp brown sugar
1/4 tsp Cayenne Pepper (optional)
4 Large boneless skinless chicken breasts
1 Head green leaf or romaine lettuce
3/4C sundried tomato and oregano salad dressing
1/8 tsp crushed chilies (optional)
1.5 tbsp peanut butter
1/8 tsp cumin powder
water to smooth (approx. 2 tsp)

Instructions:

Cook rice according to directions

Combine ½ soya, 1/8c brown sugar and 1/8 tsp cayenne pepper. Cut chicken into long strips, approx. 5 per breast. Place chicken in soya mixture and let it soak in the fridge (at least 1/2hr but the longer the better).

Rinse whole lettuce leaves under cold water and pat dry. Leave in the fridge until serving.

Mix together ¾ c salad dressing, ¼ c brown sugar and 1/8 tsp crushed chilies in a small bowl. Set aside on serving table.

In a small microwavable dish, place 1.5 tbsp peanut butter. Soften in microwave approx. 20 seconds or until slightly runny. Add 1 tsp brown sugar, 1 tbsp soya sauce, 1/8 tsp cumin and 1/8 tsp cayenne. Stir together, slowely adding water until smooth and just slightly runny. Set aside on serving table.

Set oven to broil. Place chicken flat on a cookie sheet with edges. Broil until chicken is no longer pink, flip over and cook until the other side is no longer pink. Be careful not to overcook.

To serve, place lettuce leaf on a plate with a large scoop of rice in the middle. Drizzle with sundried tomato dressing mixture on rice. Place chicken on top of rice and spread peanut butter sauce over chicken. Fold it like a taco to eat, or leave it flat and use a knife and fork.
