MNT 2

Rotation Description:During the Inpatient MNT 2 Rotation,students practicetheNutrition Care Process with populations with more complicated conditions such as renal disease, multisystem organ failure, cancer, and hepatic disease.

Hours required: 260

Typical locations:Typical locations include hospitalsor LTCfacilitieswithafull timeRDNand acute care including trauma, critical care nutrition, and nutrition support: TPN–Total Parenteral Nutrition,andTube Feeding–Enteral Nutrition.

Outpatient MNT

Rotation Description:During the Outpatient MNT Rotation,students practicetheNutrition Care Process with populations with medical conditions impacted by diet that do not require hospitalization at this time.Some group MNT activities may be satisfied with the Community Education Rotation activities.

Patient Foodservice

Rotation Description: This rotation focuses on foodservice within an inpatient setting for people who have medical needs related to their diets. While the activities in this rotation are similar to the Retail/Institutional Foodservice and Production Rotation, the Retail/Institutional rotation also includes retail settings that are not focused on medical needs. In the Inpatient Foodservice, Production, and Management Rotation,students focus on all aspects of producing and delivering nutrition to patients includingmenu planningand marketing, taking meal orders, tray preparation and delivery,safety and sanitation,quality assessment, and patient satisfaction.

Typical locations:Typical locations includefacilitieswhere people who requirespecialized mealsare stayingsuch as a hospital, long term care facility, or residential facility.

Preceptor Qualifications:Must bean inpatientfoodservicemanager or supervisor who isexperienced in planning and overseeing patientfoodservices.Preferablyan RDN;the preceptor maybea facilitychef orproduction managerwho is not an RDN.

Institutional Food Service

Rotation Description: The Retail/InstitutionalFoodservice, Production, and Management Rotation focuses onmarketing, procurement, storage, preparation, delivery, service, and managementthat include retail operations. Students practice the care and operation of equipment, sanitation audits, HACCP Guidelines, menu planning, customer service,and management activities.The activities in this rotation include practical hands-onexperience,as well as investigative research to prepare for in-depth management responsibilities.

Typical locations:Typical locations includea facility with a large retailinstitutional cafeteria or foodservice operation whose activitiesinclude marketing and procurement through delivery and service functions.These kinds of cafeterias can usually be found in hospitals, universities, or larger restaurants.

Preceptor Qualifications:Must beretail/institutional foodservicemanager orsupervisor who is experienced in planning and overseeingretailinstitutional foodservices.Preferably an RDN; the preceptor for this rotationmayalsobe a certified chef, a chef, or other production managers.

Community Rotation Information

Rotation Description:During the Community Nutrition Rotation,students develop skills in providing nutritionservices to the community at large through a variety ofactivities, programs,and services includingnutritioncounseling and education, community nutrition assessment, designing and presenting awellness program, and applying government program guidelines and policies.

Typical locations: Typical locations include facilities withaccess to individuals and groups, either by creating groups or interacting with existing groups, through a government funded

public health program, hospital, clinic, doctor’s office, community center,or existing program such as weight management, specialty cooking, or athletic programs.In order to gain a better understanding of public health programs, it is recommended, although not required, that students find one or more government health programs in which to practice. These programs include WIC, Head Start, Meals-On-Wheels, Cooperative Extension, Expanded Food and Nutrition Program (EFNEP), or SNAP-ED.

Preceptor Qualifications:Must be individuals experienced in the requirements of each activity, asstudents may be practicingactivitiesin different locations:RDN, community health professional, public health professional, wellness educator, and health educator supervisor. If the activity involves teaching client finger sticks or other medical practices, the preceptor must be anRDN, nurse, or other qualified professional.

Child/Adolescent Nutrition

Rotation Description: During the Child/Adolescent Nutrition Education Rotation,students practice promoting good health and wellness throughnutritioneducation for school-aged children and adolescents including nutrition support foracademic performance andathletic achievement,and the impact of drugs,alcohol, and peer pressure.

Hours required:40

Typical locations:Typical locations includepublic or private elementary, middle,or high schools; after school programs;and centers that have after-school and weekend programs such ascommunity centers,Boys and Girls clubs, YMCA, YWCA,and religious organizations. Obtaininga schoolsetting for this rotation is recommended in orderforstudents to gain an understanding of the school experience today’s children and adolescents encounter.

Preceptor Qualifications:Must be someoneexperienced in teachingchild/adolescentnutrition or health education,and mentoringnutrition and healthchild/adolescenteducators, preferably an RDN.This may be ateacher,dietitian, orother specialists such as a nurse, first aid instructor, orhealthcoach.If the activity involves teaching children finger sticks or other medical practices such as a class for children with a medical condition, the preceptor must be anRDN, nurse, or other qualified professional.
